NOTES AND TIPS

  • If you use frozen fruit, you’ll want to partially defrost it before mixing with the sugar. There will be more juice from the ice crystals that have formed on the fruit.
  • If you don’t love the fruit we chose, replace it with your favorites. My grandkids would love a little mango!
  • Feel free to add an additional 1/4 cup of sugar if doesn’t taste sweet enough or. decrease the sugar you add to the fruit if you prefer.

 

BEST WAY TO SERVE YOUR COBBLER

I like cobbler best when it’s served warm. Let it cool for 10 minutes or so to allow the juices can to up a bit, then serve.

Vanilla ice cream is my first choice but whipped topping or even a drizzle of cream would hit the spot.

 

Campfire Berry Cobbler

ingredients

 

FOR THE BERRY-PEACH FILLING

3 peaches sliced peaches (if using frozen peaches, thaw and drain first)
2 c. raspberries
1 c. blackberries
3/4 c. granulated sugar
3 tbsp. cornstarch

Juice and zest of a lemon

1 tsp. vanilla 

Pinch of salt

FOR THE TOPPING

1 c.  flour
2 tbsp. granulated sugar
2 tsp. baking powder
1/4 tsp.  salt

(1 stick) butter, cold, cut into 1/2″ pieces

1/2 c. buttermilk
1 tsp. vanilla extract
raw sugar, to sprinkle on top

Vanilla ice cream, for serving

DIRECTIONS

 
  1. Preheat the oven to 450 degrees.  Spray skillet with cooking spray. 
  2. In a large bowl, toss together filling ingredients then transfer to a large cast iron skillet.
  3. In a medium bowl whisk together flour, sugar, baking powder, and salt. Add butter and use your hands to incorporate until butter pieces are pea-sized. Add buttermilk and vanilla and stir until just combined. 
  4. Spoon mixture on top of fruit and sprinkle with raw sugar. Cover skillet with a lid or with foil. 
  5. Place in oven and let cook for 20 minutes and fruit is bubbling, and then remove tin foil and let cook additional 10 minutes. 
  6. Let cool for 10 minutes to let the juices thicken and then serve with ice cream!
