One Pot Chicken and Orzo Bake

 

It’s been hard knowing what to cook since my kids are all so picky these days! If one eats it the other two won’t. It’s on a rotation, I swear. Also, Harper has been a little hard wanting to be held all the time.

I need things that require less work, so I’ve been trying to change some meals to make them more Harper and Ellie friendly. Ellie really loves to help these days too. It’s really fun, but can be really hard! We need things that she can help with that won’t make too much mess. She can make anything a mess, so that’s funny. Anyways this tasted super good and really hit the spot!

 

 

One Pot Chicken and Orzo Bake

Ingredients

  • 3 cups chopped rotisserie chicken
  • 1 tablespoon olive oil
  • 1/2 large onion, finely diced
  • 3 garlic cloves, minced
  • 4 tablespoons salted butter, chopped
  • 1 tablespoon Dijon mustard
  • 1 lb. orzo pasta
  • 5 cups chicken stock
  • 2 teaspoons kosher salt
  • 2 cups frozen broccoli florets
  • 2 cups gruyere cheese shredded

 

 

 

Directions

  1. Preheat the oven to 400 degrees.
  2. Heat your Dutch oven to medium heat, add tablespoon oil to skillet, once hot add in onions, garlic and cook until starting to soften, stirring often. 
  3. Add in the butter. Once melted add the Dijon and orzo. Cook for 3 minutes until the orzo smells toasty.
  4. Slowly stir in the chicken stock and salt. Add in the broccoli and bring the liquid to a boil.
  5. Once boiling, shut off the heat. Stir in half the cheese. Put the chicken into the Dutch oven, nestling it among the orzo. Sprinkle the remaining cheese on top.
  6. Bake for 12-15 minutes until the pasta is cooked through.
  7. Let cool for 10 minutes before serving. The sauce will thicken up during this time period. Shred or slice the chicken and serve alongside the cheesy orzo.
