Dinner has been extra struggle lately. I’m tired and don’t want to cook, and my kids don’t want to eat what I cook. Even if I know they all all of the foods involved. Does anyone else’s kids hate their foods touching? It’s the weirdest thing. We’re working on it. Not trying to create stress about it, but for some reason they are afraid to try white sauces.

They are killing me this week. I love alfredo, especially homemade alfredo sauce. I linked my favorite alfredo sauce here, but you can use your favorite. It was seriously only 20 minutes prep, worth it!

Chicken Broccoli Alfredo Bake

  • 2 cups rotisserie chicken, chopped
  • 8 oz penne pasta, cooked al dente
  • 1 cup raw broccoli, chopped
  • 1 1/2 cups to 2 cups of your favorite alfredo sauce, click here for mine

  1. Preheat oven to 375 degrees.
  2. If you are making your alfredo from scratch start that.
  3. Meanwhile, take the meat off the chicken and chop it into bite sized pieces, chop up your broccoli and cook your pasta to al dente according to the packaging.
  4. Mix all the ingredients and then put into your greased 8×8 inch pan
  5. Bake at 375 degrees for 25 to 35 minutes.
