One Pot Parmesan Pasta

 

One Pot Parmesan Pasta is a one pot wonder!  Straight from the stove to the table in less than 30 minutes.  Delicious chicken, and cheese, nestled in a creamy tomato cheese sauce!  

While it’s a complete dinner on its own, this pasta dish tastes perfect served with a side of homemade garlic knots or a light side salad.

 

One Pot Parmesan Pasta

 

I absolutely love one pan dishes! Even if you think you can’t cook or you are such a pro, you will love this! You can’t fail!

You don’t have to wait for the water to boil to cook the pasta because everything is cooked together! It makes my heart sing with joy! Why haven’t we tried this before??

 

 

This recipe is plum full of creamy cheeses, chicken, and the rich flavors of garlic, tomatoes and Italian seasoning…all blended together for this delightful dish that even tastes better the next day!

 

Can You Make This in Ahead of Time?

One pot chicken pasta can be made in ahead of time. Make sure to keep it in a airtight container and then reheat it in a  skillet.

You may need to add a splash of milk or  heavy cream if the pasta has soaked up a lot of the sauce, when you go to reheat.

 

 

 

Ingredients

  • 1 Rotisserie chicken, shredded 
  • 1 tsp Italian seasoning 
  • 1 tsp garlic powder 
  • 1 medium yellow onion, minced 
  • 3 to 4 cloves garlic, minced 
  • 16 oz dried short-cut pasta
  • 24 oz jar of your favorite marinara sauce (I used Prego) 
  • chicken stock to fill empty marinara sauce jar
  • 2 cups mozzarella cheese
  • 1 cup parmesan cheese
  • salt and pepper, to taste
  • 1/2 red pepper flakes
  • additional dried Italian seasoning, optional
  • fresh parsley and/or basil, minced for garnish

directions

 

  • To a large pot or skillet (I used my dutch oven), add a drizzle of olive oil and heat over MED-HIGH heat.  
  • Add onion, garlic and seasonings to the pot and cook about 2-3 minutes, until soft.  Pour in marinara sauce, fill up empty sauce jar with chicken broth and add to the pot.  Bring to a boil, then reduce to a strong simmer.
  • Add chicken and pasta, stir, then cover and cook for 10-15 minutes, until pasta is cooked to your liking.  Stir in parmesan cheese and 1/2 cup of the mozzarella cheese.
  • Sprinkle remaining 1 cup mozzarella cheese on top of the dish and cook another 2-3 minutes, until cheese is melted and gooey.
  • Sprinkle with additional Italian seasoning if desired, and garnish with parsley or basil.
