My family loves potatoes! We love Funeral potatoes, French fries, Mashed potatoes, and the list goes on! They are requested for birthday dinners and family dinners. So it makes sense for us to reveal a new twist on that beautiful potato!

 

This recipe is so easy! You can use leftover mashed potatoes or break out the instant!  When I was little and would sleep over at my grandparents house, my grandpa would make us potato pancakes in the morning. This recipe reminds me of this. So delicious!

 

 

 

TIPS AND TRICKS

Storage: If you have leftovers, you can store these bad boys in an airtight container in the fridge for up to 3 days. You can also freeze them for 3 months in an airtight container.

Add ons: To mix up the recipe a little you can add some curry, red onion and a little fresh cucumber, and Greek yogurt on top!

Another option, you could add chopped spinach, garlic and a little Feta!

Last idea, add sun dried tomatoes, green onions and a little marinara sauce.

Make Ahead: This is a perfect dish to make ahead and heat up when you need them!

 

 

Easy Potato Pillows

Easy Potato Pillows

Ingredients

  • 2 cups mashed potatoes
  • 3 large eggs, beaten
  • 1 cup cheddar cheese, shredded
  • 4 ounces whipped cream cheese
  • 1/4 cup bacon bits, or diced ham
  • 1/4 cup chives, chopped
  • 1 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 1/4 cup Parmesan cheese, shredded

Instructions

  1. Combine in a mixing bowl the mashed potatoes, eggs, cream cheese, cheddar cheese, bacon bits and chives.
  2. Season with garlic salt and pepper.
  3. Grease a muffin pan and mound a heaping spoonful into each cup.
  4. Sprinkle each cup with Parmesan cheese.
  5. Bake for 30-35 minutes at 400°F or until golden brown.
  6. Cool for 5 minutes and dish and serve warm you can serve with sour cream, salsa or even hot sauce.

  1. I was so intrigued by the title and oh boy! These sound delicious. We are definitely huge fans of potatoes in our house too. In fact we’re having roasted potatoes tonight!
