Cheesy Sausage and Potatoes
Cheesy Sausage and Potato Casserole is a quick and easy dish that you can throw together in minutes! Is it for breakfast? Is it for Dinner? Why not both!! The combination of potatoes and sausage make the perfect marriage.
We are a big potato family! We love cheesy potatoes that seem to melt in your mouth. Add sausage, green pepper, onion and you have a dinner that will blow your mind!
If you decide to serve this at breakfast just add a couple of sunny side up eggs and toast and your breakfast is complete! Or if you are hankering to have this as your dinner, just add a green salad and a few dinner rolls! Both ideas will make your family happy!
The great thing about this recipe is that you probably have most of the ingredients in your kitchen right now! Plus this is a budget friendly dish. If you don’t have these items here are a few ideas that you can switch out.
- Instead of sausage, you can use bacon
- We used cheddar cheese but you can use any kind of mild cheese, or use a blend
- Don’t like green peppers? Leave them out!
- You can add the veggies that your family loves
- 3 pounds baby potatoes, cut into quarter
- 1 stick of butter melted
- 1 pound pork sausage, we used Jimmy Deans but use your favorite brand
- 1 medium yellow onion chopped
- 1 green pepper, diced
- 3 cups shredded cheddar cheese
- 2 tablespoons chopped fresh parsley for garnish
Preheat oven to 350°F and spray 13x9-inch baking dish with nonstick cooking spray.
Place potatoes in a large saucepan, over medium-high heat, and cover them with cold water. Bring the water to a boil Cook, uncovered 8-10 minutes or until the potatoes are just fork tender. Drain the potatoes and place them in the prepared baking dish.
Pour the melted butter over the potatoes.
While the potatoes cook, crumble the sausage in a large skillet set over medium heat. Add the chopped onion, green pepper and cook until the veggies are soft and the sausage is cooked through.
Combine the sausage/onion with the potatoes, gently.
Top with cheese and bake, uncovered, at 350°F for 7-10 minutes or until the cheese is melted.
Garnish with chopped parsley, if desired, and serve.
