It’s crazy when me and Cassie are on the same wave length! She shared with you those fabulous Sweet and Sour Meatballs and today I’m giving you this scrumptious recipe.

I went through a couple of weeks that I wanted to do is eat out! I didn’t want to cook in the heat, do dishes or even think what I wanted to make for dinner. Me and my husband realized that everything that we bought from fast food places started to taste the same! We missed cooking!! The truth is, homemade is always better and it really doesn’t take any longer to make than the time you wait in line for your order.

 

 

VARIATIONS

  • If you don’t want to use pork, you can use any protein that you have or love
  • Add more veggies. This recipe calls for pepper and onion but I think the more the merrier.
  • Instead of rice or noodles, you can use zucchini noodles.
  • I used a pork tenderloin, but you can use a pork butt or a shoulder roast.
  • If you want your pork crispier, double fry your chunks!  Fry the first time for 3-4 minutes or till cooked through and golden brown. Let drain on a wire rack. Heat the oil up to about 390 degrees and fry again for 1-1 ½ minutes or till a deep golden.

Ingredients

  • oil for frying
  • 1 1/2 pound pork tenderloin cut into one inch pieces
  • salt and pepper, to taste
  • 1/2 cup cornstarch
  • 1 red bell pepper cut into one inch pieces
  • 1 green bell pepper cut into one inch pieces
  • 1 onion cut into one inch pieces
  • 1 {15 ounce can} pineapple chunks, drained or fresh pineapple
  • Sweet and Sour Sauce
  • 2/3 cup granulated sugar
  • 4 tablespoons ketchup
  • 1/4 cup white vinegar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon soy sauce
  • 2 to 3 garlic, minced
  • 1 Tablespoon cornstarch
  • *sesame seeds and chopped green onions for garnish.

Instructions

  • In a large skillet add the oil about one inch high in the pan and heat to 350 degrees.

    Salt and pepper the pork and toss in the cornstarch.

    Add the pork to the oil and cook until golden and crispy about 3-4 minutes. Remove and set aside on a plate.

    In a large skillet add the olive oil, bell pepper and onion and sauté until tender.

    In a small bowl whisk the sugar, ketchup, vinegar, soy sauce, salt and cornstarch.

    Add the pork and pineapple back to the skillet with the peppers and pour the sauce on top. Let simmer until heated through. Garnish with sesame seeds and green onions.
