This low carb chicken casserole doesn’t have to be boring! This is loaded with creamy cheesy flavors for a super delicious dinner. Low carb casseroles are a great way to get that comfort food feeling in without cheating on your low carb diet.

I love recipes that I can make for my family that someone that is on a regular diet or if someone in my family is doing keto, will absolutely love! This one does the job!

This recipe is so creamy and delicious that will become one of your go to recipes. It takes less than a hour from prep to your table!

 

 

Life is crazy! Whatever your life looks like, it’s always good to have a go to recipe to make on those nights that you only have minutes to cook.

Of course, low carb casserole recipes are one of the best easy keto dinners. You can throw them together in advance or make them last minute. The prep time is typically minimal, especially if you have some basic staples in your fridge already. This would be a perfect freezer meal!

 

 

 

 

Ingredients

  • 1 Rotisserie Chicken, shredded
  • 3 heads of fresh broccoli, cut into small pieces
  • 2 tablespoons butter
  • 8 oz. Philadelphia Cream Cheese
  • 1 3/4 cup heavy whipping cream 
  • 2 cups mozzarella cheese 
  • 1 cup parmesan cheese
  • 1 tablespoon garlic powder 
  • 1 teaspoon paprika 
  • 1 teaspoon Italian seasoning 
  • chicharrones chips
  • salt and pepper to taste

 

directions

    • Preheat oven to 375 degrees. If you haven’t done it yet, shred your chicken. 
    • In a saucepan, add butter, heavy whipping cream, garlic, and 1/2 of the Italian seasoning. Add softened cream cheese and stir with a whisk until thoroughly combined and cook over low medium heat until the sauce is smooth. 
    • Add the cheeses stirring continually reserving 1/4 cup of Mozzarella 1/8 cup of the Parmesan for the topping.  
    • Grease a 9 X 13 casserole dish and layer the shredded chicken first. 
    • Add the cut broccoli on top of the chicken.
    • Remove saucepan with the cheese sauce from the stove and pour on top of the broccoli and shredded chicken making sure that it is completely covered. 
    • Sprinkle the reserved cheese on top of the casserole along with paprika, and the remaining Italian seasoning. 
    • Crush up as many of the chicharrones chips as you want for your topping. They are the best topping ever!
    • Bake in a 375 degree oven for 30 minutes. 
    • Enjoy!

  • Chicken breast or thighs
  • Bacon – cooked until crispy
  • Garlic – minced
  • Ranch dressing
  • Vegetables – fresh or frozen
  • Shredded cheese

  1. Okay, friends. . . I’ve been on a low-carb diet for a few weeks, and it never occurred to me that I could make a casserole–but of course this recipe includes yummy foods that are low-carb! I’m not a fan of broccoli, so I’d leave that out (too bad, since broccoli is a great thing to eat on a diet). THANK YOU for this!
