Loaded Potato Skins are a great party appetizer or just for dinner. Bacon, cheese, and potatoes are a great combo for any meal.
Sometimes you are just craving all the goodness and you have recently been to Costco and bought a large bag of potatoes. We are trying all of the things. The boys typically love potatoes, but they also like variety.
Baked potatoes, fries, roasted potatoes, and now loaded potato skins. Sawyer wasn’t a fan, but Grey was even though he always says he hates cheese. Bacon makes everything good.
- Golden Potatoes
- olive oil
- Kosher salt
- cheddar cheese
- bacon, cooked, chopped
- Chives (optional)
- Preheat the oven to 375 degrees.
- Wash your potatoes. Stab with a fork a couple of times each potato, then coat in olive oil and then sprinkle Kosher salt on top.
- Bake for one hour, then allow cooling slightly. Once they are cool enough to handle, then cut the potatoes in half and scoop out the centers with a spoon. Set aside and use mashed potatoes or something else.
- Then top with cheese, bacon, and chives if desired. My kids won’t eat them so I left them off. Then continue to bake for 10 minutes or until the cheese is melted.
