Lemon Parmesan Couscous

 

 

Couscous is quickly becoming one of my go-to sides for dinner. Every time we have chicken, I want a new side, couscous is not that side. It’s super quick to make and can be done last minute with the stuff you have on hand. You can even get creative with it! I love it! This was a really good version, lemon is just the right tang and parmesan is always a great addition.

 

 

Lemon Parmesan Couscous

Ingredients

  • 1 cup couscous
  • 1 1/2 cup chicken broth
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • zest of 1 lemon
  • 1 1/2 tablespoon lemon juice
  • 1/4 grated parmesan
  • parsley for garnish

 

 

Directions

  1. In a medium saucepan, bring the broth to a boil. Add the couscous, olive oil, and salt and stir. Cover and remove from the heat, and let stand for 8 minutes.
  2. Fluff the couscous with a fork, transfer it to a large bowl and toss it with the garlic, lemon zest, parmesan, and lemon juice.
  3. Transfer mixture to serving platter and garnish with parsley and lemon wedges if you’d like.
