Sheet Pan Parmesan Lemon Chicken -Keto Style

Sheet Pan Crispy Parmesan Lemon Chicken is such an easy meal with crispy breaded chicken with broccoli and asparagus. This is the perfect meal for your family! We made it a keto style but it would be perfect for any diet!




This sheet pan chicken is crunchy on the outside and juicy on the inside. It is a complete dinner made on just one sheet pan. A full meal with just one dish to wash? Sign me up. Life has been so crazy during this quarantine and I am trying harder to make meals for my family during the week since it’s not as easy to go to a restaurant. Crispy parmesan lemon chicken has just made its spot at the top of my family’s favorite meals.   • 1 large egg
  • 2 tablespoons lemon juice (or juice of 1/2 a lemon)
  • 2 teaspoons minced garlic
  • salt and pepper, to season
  • 1/2 cup pork rinds, crushed or Italian bread crumbs (if you aren’t doing keto)
  • 1/3 cup parmesan cheese
  • 4  chicken thighs
  • 1 head of  broccoli, separated 
  • 1 stick of butter, melted
  • 2 teaspoons minced garlic
  • Salt, to taste
  • 1 pound asparagus, ends cut off
  • 1 fresh lemon



  • Preheat oven to 400°F. Lightly grease a baking sheet with cooking oil spray, or a light coating of oil. Set aside.
  • In a large bowl, whisk together the egg, lemon juice, 2 teaspoons garlic, salt, and pepper.
  • Dip chicken into the egg mixture, cover, and allow to marinate in the refrigerator for 30 minutes to an hour (if time allows). If not, it will be fine.
  • In another bowl, combine the pork rinds crumbs/breadcrumbs with the parmesan cheese.
  • Dredge the egg coated chicken in the pork rind crumb/parmesan mixture, lightly pressing to evenly coat.
  • Place chicken onto the baking sheet and lightly spray with cooking oil spray. Place sheet pan in oven and cook chicken for 20 minutes. Mix together the butter, 2 teaspoons garlic and salt to taste, and pour half of the butter mixture over the veggies. Toss to evenly coat.
  • Remove baking tray from the oven. Place the broccoli and asparagus around the chicken on the baking sheet. Pour over the remaining garlic butter and return to the oven to cook for 15 minutes, or until chicken is golden and crisp, and the juices from the chicken are clear. 
  • Squeeze a light coat of fresh lemon over the ingredients on the sheet pan. Enjoy!
