Steak Sheet Pan Dinner

I’m always looking for something new to cook for dinner that doesn’t take a lot of time and is easy cleanup! It seems like I get into a rut and keep making the same recipes over and over again, and there’s nothing wrong with that but every once in awhile you need a change! The past few weeks, I have been looking on the internet for something new and I started seeing all these sheet pan dinners. It intrigued me and I decided to come up with a recipe that I knew my family would love and hopefully yours will too.

My family loves steak and we have had it prepared in so many ways. I didn’t think I could be impressed but this was the best steak I have had in years!!! The best part is you will only have 2 dirty dishes to clean up and it will only take minutes to prepare!

  1. 2 pounds baby red potatoes
  2. 1 1/2 cup broccoli florets
  3. 1/2 sliced purple onion
  4. 1 cup baby carrots
  5. 2 tablespoons olive oil
  6. 3 cloves garlic, minced
  7. 1 teaspoon dried thyme
  8. Kosher salt and freshly ground black pepper, to taste
  9. 2 pounds thin cut rib eye steak, patted dry
  1. Preheat oven to high broil. Lightly oil a baking sheet or coat with nonstick spray.
  2. In a large pot of boiling salted water, cook potatoes until parboiled for 12-15 minutes. A few minutes before potatoes are done, add the carrots and broccoli. drain well.
  3. Put the veggies back in the pot. Add olive oil, garlic and season with salt and pepper, to taste. Gently toss to combine.
  4. Place potatoes, carrots, red onions and broccoli in a single layer onto the prepared baking sheet.
  5. Season steaks with salt and pepper, to taste, and add to the baking sheet in a single layer.
  6. Place into oven and broil until the steak is browned and charred at the edges, about 4-5 minutes per side for medium-rare, or until desired doneness.
  7. Top with the prepared garlic butter, and enjoy!!

  1. 1/2 cup unsalted butter, at room temperature
  2. 1 teaspoon dried parsley
  3. 3 cloves garlic, minced
  4. Zest of 1 lemon
  5. 1/2 teaspoon kosher salt
  6. 1/4 teaspoon ground black pepper
  7. Pinch of cayenne pepper
  1. In a small bowl, combine all the ingredients and set aside
