I have noticed a huge difference in the way that I feel and my energy levels. This salad was good and Matt even commented on how good it was and he typically only likes salads with ranch dressing, so win.

Yummy Broccoli Salad
Ingredients
- 4 slices bacon
- 1/4 cup light sour cream
- 1/4 cup light mayonnaise
- 4 teaspoons rice vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups of broccoli
- 2 green onions chopped
- 1/2 cup shredded extra-sharp cheddar cheese
Directions
- Cook the Bacon
- In a large skillet over medium heat, cook bacon until crisp (5–7 minutes).
- Transfer to a paper towel-lined plate. Once cool, chop into bite-sized pieces.
- Make the Dressing
- In a large mixing bowl, whisk together sour cream, mayonnaise, rice vinegar, sugar, salt, pepper, and green onions until smooth.
- Assemble the Salad
- Add broccoli florets, cheddar cheese, and chopped bacon to the bowl with the dressing.
- Toss until everything is evenly coated.
- Chill & Serve
- Refrigerate for at least 30 minutes before serving to let the flavors mingle.
