It’s BBQ season! This Tortellini salad recipe only takes minutes to make and your family will absolutely love!
I love, love Summer! It’s so fun to get together with family and friends and you know you need food for these celebrations! I love to BBQ, but love when there’s a parade of salads to compliment the main dish!
This recipe speaks my name! It’s full of beautiful veggies to showcase the cheesy tortellini noodles and lathered in Italian dressing. Do I need to say anything else?
TIPS AND TRICKS
TORTELLINI: I used a three cheese tortellini but pick your favorite one.
VEGGIES: This is the perfect dish to add the fresh veggies of the season. Go crazy! Add the veggies that your family will love!
ITALIAN DRESSING: I used the store name brand and it was delicious. Olive Garden’s dressing is amazing and homemade would put it over the top.
FRIDGE TIME: This salad will taste better if it has an hour to chill in your fridge. You might need to add a little more dressing if it dries out.
STORING: Leftovers will stay good in an airtight container for up to 3 days.
- 20 ounces three cheese tortellini
- 1 pint cherry tomatoes , sliced in half
- 1 bell pepper , chopped
- 1 cucumber , chopped
- 1 cup Mozzarella pearls
- 1 small red onion, diced
- 1 cup Italian dressing
- 1/4 cup parmesan cheese, shredded
- 1 Tablespoon Sesame seeds
Cook tortellini according to package directions. Drain and run through cool water, until cooled.
Cut the tomatoes, bell pepper, cucumber and onion on a cutting board. Then combine them with the tortellini, and Mozzarella pearls in a large bowl. In a small bowl, combine the Italian dressing, Parmesan cheese, and sesame seeds. Pour the dressing over the top and stir gently until evenly coated.
Store in the refrigerator until ready to serve.
