Sometimes, they love chicken sometimes they don’t. It’s really a crap shoot to be honest. One thing they will always eat is veggies, which seems odd.
We’ve started just making dinner and trying to put one thing on their plate we know they’ll eat. These could have gone either way to be honest, Grey some days just doesn’t want marinara, then the next day he’ll be like, does this have my favorite sauce? Stuffed Shells with Ground Beef
ingredients
- 20 jumbo pasta shells
- 1 teaspoon olive oil
- 1 onion, chopped
- ¾ teaspoon kosher salt, divided
- 2 garlic cloves, chopped
- 1 pound lean ground beef
- 28 ounces marinara sauce
- 1 (15-oz) container cottage cheese, small curd
- 1 egg
- 2 cups part skim shredded Italian cheese blend (or shredded mozzarella), divided
- ½ cup parmesan cheese, divided
Directions
- Preheat & Prep
- Preheat oven to 350°F.
- Cook shells in a large pot of salted water for 2–3 minutes shy of package directions (just under al dente).
- Drain, rinse with cold water, and set aside.
- Make the Beef Marinara
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add onion and ¼ teaspoon salt; sauté until translucent (3–5 minutes).
- Add garlic; cook until fragrant (about 1 minute).
- Add ground beef and ¼ teaspoon salt; cook until browned (5–7 minutes), breaking into small pieces.
- Drain excess oil if needed.
- Stir in marinara sauce, then remove from heat.
- Mix the Filling
- In a large bowl, combine cottage cheese, egg, 1 cup Italian cheese blend, ¼ cup parmesan, and remaining ¼ teaspoon salt.
- Stuff the Shells
- Fill each cooled shell with about 2 heaping tablespoons of the cheese mixture.
- Assemble the Dish
- Spread half the beef marinara sauce in the bottom of a large baking dish.
- Arrange stuffed shells on top.
- Spoon remaining beef marinara over shells.
- Sprinkle with remaining 1 cup Italian cheese blend and ¼ cup parmesan.
- Bake
- Cover with foil; bake 40 minutes.
- Uncover and bake an additional 5 minutes until cheese is melted and bubbly.
- Serve
- Sprinkle with parsley if desired. Serve hot.
