We did a lot of cooking over the holidays, probably like all of you! We had turkey, ham, state fair food and finally on New Year’s day we had Prime Rib! It was worth the wait!

I always thought Prime Rib was hard to cook but a few years ago, my son, Zac, convinced me to try it. I am so glad we did! It is a little pricey but if you have any leftovers, they make a great second meal! Plus, if you are feeding a large crowd, it’s more affordable than you think.

 

 

COOKING INFORMATION PER POUND

Depending if you have a bone in roast or a boneless cut, here is a guide to help you to be successful!

  • BONE IN: Cook the prime rib at 450 degrees for 15 minutes. Then reduce the temperature to 325 degrees until the temperature of the meat is 110 degrees. About 15 minutes of cooking time per pound.
  • BONELESS: Preheat the oven to 500 degrees for exactly the time you calculate because of the weight of the roast. For example: for a 6 pound roast: 6×5=30, so cooking time is 30 minutes. Next: Turn the oven off and wait 2 hours before opening the door. It’s important that you don’t open the door. If it’s not at the temperature that you want, turn the oven to 325 degrees and let it cook for 30 minutes longer.

Ingredients

  • 1 stick of butter, softened
  • 1 Tablespoon pepper
  • 1 teaspoon herbes de Provence
  • 3 to 4 teaspoons salt

Instructions

  1. Place rib roast on a plate and bring to room temperature before cooking, about 4 hours.
  2. Combine butter, pepper, and herbes de Provence in a bowl; mix until well blended. Spread butter mixture evenly over entire roast. Season roast generously with kosher salt.
  3. Preheat an oven to 500 degrees
  4. Roast the 4-pound prime rib in the preheated oven. To calculate how long to cook, see below in notes. Turn the oven off and, leaving the roast in the oven with the door closed, let the roast sit in the oven for 2 hours.
  5. If it's not the desired temperature at this time, turn the oven to 350 degrees and continue to cook for 30 minutes.
  6. Remove roast from the oven, slice, and serve.

Notes

To get a really good crust, 2 days before cooking the roast, remove from package, dry off with paper towels and generously cover with salt. Place back in the fridge. The day you are going to cook the roast, remove it from the refrigerator, wipe off the salt, and then add the butter mixture. Let it get to room temperature. Don't worry if you don't have this time, it will still amazing!
