Oatmeal Cream Pie Cookies
🍪✨ Oatmeal Cream Pie Cookies — Nostalgia You Can Bake
Soft, chewy, marshmallow‑filled magic that tastes like childhood… only better.

These Oatmeal Cream Pie Cookies are the homemade glow‑up of that lunchbox classic we all secretly (or not so secretly) loved. They’re the kind of treat that makes you smile before you even take a bite.

- Sweet but balanced — the oats and cinnamon keep things cozy.
- A total crowd‑pleaser — perfect for bake sales, potlucks, or “just because” baking days.
💬Reader prompt: Were you the kid who traded for an oatmeal cream pie at lunch, or the one who guarded yours like treasure?
When my son was in high school, I would buy Little Debbie Oatmeal cookies every time I went to the store. His one friend was convinced I was buying them just for him. There’s just something that hits the spot when you eat a Little Debbie’s cookie!
Now think of the yumminess of that and take it up a notch! Homemade is even better! I wish I could reach through your computer screen and give one right now. It would make your day!

Oatmeal Cream Pie Cookies
Ingredients
- For the Cookies:
- ½ cup butter, at room temperature
- 3/4 cup brown sugar
- 1 large egg
- 1 tablespoon molasses (optional)
- 1 teaspoon vanilla
- 3/4 cup flour
- ½ teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1 cup quick cooking oats
- For the filling:
- ½ cup butter
- 1 cup powdered sugar
- 7 ounces marshmallow fluff
Instructions
cookies:
- Preheat the oven to 350 degrees and line 2 sheet pans with parchment paper or spray pans with cooking spray.
- In a large bowl, cream the butter and brown sugar until smooth and combined. Add the egg, molasses, and vanilla and stir to combined. Scrape the sides of the bowl and add the remaining ingredients.
- Use a small cookie scoop to spoon 2 teaspoon sized rounds of dough 2” apart on the prepared cookie sheets. Bake one at a time in the preheated for about 9 minutes or until the edges are set and turning golden. The center of the cookie may still look wet. Remove from oven and allow to cool completely. Continue baking the remaining cookies and allow to cool completely.
filling:
- Cream the butter and powdered sugar together on medium speed in a large bowl using a hand mixer. Add the marshmallow fluff and stir until well combined. If needed, you can thin the frosting out slightly with a teaspoon or two of milk- be careful not to add to much though as this makes for a messy cookie. Spoon the cream in between two cookies of the same size. Alternatively, you can just spread large dollops on with a knife.

👩🍳 Cooking Tips for Cookie Success
- Don’t overbake — they should be soft in the center when you pull them out; they’ll firm up as they cool.
- Molasses magic — optional, but it deepens the flavor and adds chewiness.
- Cool completely before filling — warm cookies will melt the filling into a gooey mess (unless that’s your vibe).
- Uniform size — use a cookie scoop so your sandwiches match up perfectly.
- Pipe for pretty — a piping bag makes the filling look bakery‑level.

🎨 Recipe Variations
- Chocolate Drizzle — melt chocolate and drizzle over the tops for extra indulgence.
- Pumpkin Spice — swap cinnamon for pumpkin pie spice in the fall.
- Nutty Twist — add finely chopped pecans or walnuts to the dough.
- Salted Caramel — mix a spoonful of caramel sauce into the filling and sprinkle with sea salt.
- Mini Pies — make bite‑sized versions for parties.
🧒 Kid Tips
- Let kids help scoop the dough — it’s like making little cookie snowballs.
- Give them a piping bag for the filling (with supervision) — they’ll love “decorating.”
- Make mini versions for smaller hands.
- Keep the molasses mild if baking for very young kids.
💬 Reader prompt: Parents — do your kids go for the cookie part first or the filling?
🛒 Grocery Hacks
- Brown sugar saver — keep a marshmallow or bread slice in the container to prevent hardening.
- Marshmallow fluff — store upside down to make scooping easier.
- Oats — buy in bulk; they last forever and are cheaper per pound.
- Butter — stock up during sales and freeze.
- Molasses — lasts ages in the pantry; great for gingerbread, BBQ sauce, and more.

Some cookies are just cookies. These Oatmeal Cream Pie Cookies? They’re a memory you can bake. They’re the kind of dessert that makes people’s eyes light up when they see them on the table. They’re perfect for sharing, gifting, or hoarding in a secret container in the pantry (no judgment).
I love that they’re endlessly adaptable — you can keep them classic, dress them up for the holidays, or make them mini for parties. They’re forgiving, too; even if your cookies aren’t perfectly round, the filling will make them look (and taste) amazing.
So here’s my challenge: bake them, share them, and tag your creations with #OatmealCreamDream so we can all drool together, swap ideas, and maybe even inspire the next great cookie trend. Because baking isn’t just about the food — it’s about the joy, the connection, and the little moments that make life sweeter.
Here’s to soft cookies, fluffy filling, and the kind of treats that make you feel like a kid again. 🍪💛
