I have always loved a good cookie! There’s just something about a homemade cookie that makes you happy while eating something that is totally delicious!

I had brown bananas sitting on my counter, like I’m sure a lot of you have, and I thought that I needed to make something with them before I needed to throw them away. I usually make a loaf of yummy banana bread but it seemed time to branch out.

I really haven’t ever tried making a banana cookie before, and I thought how can I go wrong, bananas always make everything better! I was right!

TIPS AND TRICKS

  • CHIPS: I use milk chocolate chips because I like the taste, but if you love the dark chocolate that would pair well with this recipe. You can also, substitute the chips for toffee chips and you can even add a cup of your favorite chopped nut!
  • STORAGE AND FREEZING: You can keep leftover cookies for up to 3 to 5 days in an airtight container. You can also freeze them up to 3 months.

Chocolate Banana Cookies

Ingredients

  • 1 1/4 cups flour
  • 1/2 cup unsweetened cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted and slightly cooled
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 ripe banana mashed (½ cup)
  • 1 large egg yolk
  • 2 teaspoons vanilla
  • 1 cup milk chocolate chips

Instructions

  1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.

  2. In a bowl, whisk together the flour, cocoa, baking soda, cornstarch, and salt. Set aside.

  3. In a different bowl, beat together the melted butter and sugars until combined. Add the mashed banana and mix until combined. Add the egg yolk and vanilla and mix again.

  4. Add the dry ingredients and mix on low until just combined. Don’t over mix. Stir in the chocolate chips.

  5. Use a cookie scoop or spoon to scoop the dough into balls, about 2 tablespoons of dough per cookie. Roll into a ball and place on the prepared baking sheet, about 2 inches apart. Gently flatten the tops of the cookies with the palm of your hand. Bake the cookies for 10 to 11 minutes or until set but still soft in the center. Remove from the oven.

  6. Let the cookies cool on the baking sheet for about 5 minutes and then transfer to a cooling rack to cool completely.
