I’ve really been trying to be a little more healthy, eat a little less fat and a little more protein. The thing is, I love Mac and Cheese so much but I just feel like I always eat too much and I don’t stay full for very long.
Eating more protein is supposed to help with that and this Mac and Cheese is really creamy and it made me feel full for a longer period of time. It makes about 4 servings and you can add your favorite noodles. The sauce is creamy and gives you all the Kraft mac and cheese vibes with more protein!

👩🍳 Cooking Tips for the Creamiest High Protein Mac and Cheese
- Blend until silky — the smoother the sauce, the more it mimics a traditional cheese sauce.
- Adjust thickness — add a splash more milk if you like it looser, or blend in extra cheddar powder for a thicker sauce.
- Season well — protein-rich sauces can taste flat without enough salt; taste and adjust before serving.
- Use hot pasta — the residual heat helps melt the cheese and bring the sauce together.
- Make it ahead — store sauce in the fridge for up to 4 days; reheat gently to avoid separation.
🎨 Recipe Variations
- Spicy Kick — Add a pinch of cayenne or a splash of hot sauce to the blender.
- Veggie Boost — Blend in roasted butternut squash or steamed cauliflower for extra nutrients.
- Bacon Lover’s — Stir in crispy bacon bits before serving.
- Tex-Mex Twist — Add taco seasoning and top with diced tomatoes and jalapeños.
- Gluten-Free — Use gluten-free pasta or serve over zucchini noodles.
🧒 Kid Tips
- Use fun-shaped pasta to make it more exciting.
- Let kids sprinkle their own toppings — shredded cheese, breadcrumbs, or peas.
- Keep seasoning mild for picky eaters.
- Serve with a side of fruit for a balanced meal.
🛒 Grocery Hacks
- Cottage cheese — buy in bulk tubs; it’s cheaper and lasts longer.
- Cheddar powder — order online in bulk to save money.
- Laughing Cow wedges — keep a multipack in the fridge for snacks and recipes.
- Shred your own cheese — better melt and flavor than pre-shredded.
- Milk — any milk works; use what you have on hand.
