Healthier Chicken Fried Rice
Ingredients
- 1 1/2 to 2 pounds of chicken breast
- 1 tablespoon garlic powder
- 2 tablespoon soy sauce
- 2 tablespoon olive oil
- 300 grams frozen mixed veggies, I used carrots, peas, corn and green beans
- 6 eggs, whites only
- 3 eggs, the whole egg
- 750 grams of day old cooked rice
- 3 tablespoons soy sauce
- 3 tablespoons toasted sesame oil
Directions
- Marinate the Chicken
- In a bowl, combine chicken, garlic powder, 2 Tbsp soy sauce, and 1 Tbsp olive oil.
- Toss to coat and let marinate for 15–20 minutes.
- Grill the Chicken
- Heat grill to medium-high.
- Cook chicken until internal temperature reaches 165°F.
- Let rest before chopping into bite-sized pieces.
- Cook the Veggies
- In a large pan over medium heat, add 1 Tbsp olive oil.
- Add frozen veggies and cook until defrosted and tender.
- Scramble the Eggs
- Whisk egg whites and whole eggs together.
- Push veggies to one side of the pan, pour eggs into the other side, and scramble until cooked through.
- Add Rice & Chicken
- Add day-old rice to the pan, stirring to combine with eggs and veggies.
- Add chopped chicken.
- Season & Serve
- Drizzle with 3 Tbsp soy sauce and 3 Tbsp toasted sesame oil.
- Stir well, heat through, and serve warm.
