Keto Chicken Alfredo! The fitness journey continues! Just to refresh your memory, my husband decided two weeks ago that he was going to do the Keto diet.

I have been scrambling to come up with Keto-friendly dishes that can help my man out! I must say that they are pretty tasty and we are eating more veggies than ever! The good news is that Mike has lost around 8 pounds and I think he’s feeling better. 

 

Keto Chicken Alfredo

 

I didn’t know how this recipe would go over with my husband and daughter because we have never been zucchini eaters but this was so good! We will be eating keto chicken alfredo even when the fitness journey is over!

 

I absolutely love alfredo sauce and matter of fact that is the only thing I get at Olive Garden. Imagine my surprise when I find an alfredo sauce that I like even more than my old standby! If you don’t love zucchini you will be surprised how much you do in this dish! There is love in the air!

 

Keto Chicken Alfredo

Ingredients:

3 large zucchini
2 tbsp. extra-virgin olive oil, divided
3/4 lb. chicken breast
kosher salt
Freshly ground black pepper
1 tsp. Italian seasoning
3 to 4 cloves garlic, finely minced
1 c. half-and-half (or whole milk)
8 oz. cream cheese
1 c. freshly grated Parmesan (plus more for serving)
1/4 c. fresh chopped parsley

 

 

Directions:

Make zucchini noodles, my local store already has them ready to use. If this isn’t possible you can make zucchini slices by using a vegetable peeler, peel zucchini lengthwise to create long, thin strips. Lay flat on a paper towel-lined baking sheet until ready to use.
 
In a large skillet over medium-high heat, heat 1 tablespoon oil. Season both sides of chicken breasts with salt, pepper, and Italian seasoning and cook until cooked through, 6 to 8 minutes per side. Transfer to a cutting board and slice into strips.
 
Add remaining tablespoon olive oil to the skillet. Add garlic and cook until fragrant, about 1 minute, then add half-and-half and cream cheese and cook, stirring often, until cream cheese is melted. Add Parmesan, then season with salt and pepper and simmer until the sauce has thickened, 3 to 5 minutes.
Fold in cooked chicken, zucchini noodles, and parsley. Serve immediately.
