Ingredients

  • 4 tablespoons butter
  • 1 pound lean ground beef
  • 1 small chopped onion
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 to 4 garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cups small cubed potatoes
  • 3 cups chicken broth
  • 1/4 cup flour
  • 1 cup milk
  • 1 cup heavy whipping cream
  • 2 cups shredded Cheddar cheese
  • 1/2 cup sour cream

Instructions

  1. In a Dutch oven on a medium heat, brown and crumble your ground beef. Drain the excess grease off the meat and leave the meat in the colander while you prepare the veggies.
  2. Melt butter in the same pot you prepared the hamburger, on a medium heat; add onion, carrots, celery, and garlic. Cook and stir until the veggies are tender, 5 to 7 minutes.
  3. Stir in salt and pepper. Add potatoes and broth and bring to a boil; reduce heat to low and simmer until potatoes are tender, 15 to 20 minutes.
  4. In a small bowl, combine heavy cream, milk, and flour and whisk until smooth, about 1 minute. Gradually add this to the soup. Stirring constantly. Bring to a boil; reduce heat to low and stir in cheese until melted. Add sour cream; stir until just heated through.
