Cowboy Spaghetti
buckle up, because we’re about to take Cowboy Spaghetti from “yum” to “YEE-HAW, pass me another plate!” 🤠🍝
If spaghetti and chili had a wild west love child, it would be this Cowboy Spaghetti — bold, cheesy, and ready to lasso your taste buds!

Some recipes are cozy. Some are hearty. And then there’s Cowboy Spaghetti — the kind of dish that makes you want to lean back in your chair, sigh happily, and declare, “Now that’s dinner.” It’s smoky from the bacon, rich from the beef, a little spicy from the chili powder, and oh-so-cheesy. Plus, it’s a one-pot wonder that feeds a crowd without breaking the bank.
And because I can’t resist giving you more than you asked for, we’re pairing it with a homemade pizza crust and garlic sticks recipe so you can turn this into a full-on family feast night.
Spaghetti has always been one of my stand by dinners as my kids have been growing up. It’s fast, easy and it’s not hard to please everyone in the family. Most picky eaters will eat spaghetti.
This is a fun and delicious twist on the traditional recipe. We are moving away from the Italian version and making it a little bit more American! It’s a little bit spaghetti meets chili! The flavors marry so well together. It will be so hard to stop eating this yummy dish!

Cowboy Spaghetti
🧑🍳 Cooking Tips
- Bacon First, Always: Cooking bacon first means you get that glorious smoky fat to flavor the beef and onions.
- Cheese Timing: Stir in cheese off the heat for the creamiest melt.
- Spice Control: Love heat? Add a pinch of cayenne. Cooking for littles? Dial back the chili powder.
🎨 Recipe Variations
- Southwest Kick: Swap cheddar for pepper jack and add corn.
- Veggie Boost: Stir in diced bell peppers or zucchini.
- BBQ Twist: Replace Worcestershire with BBQ sauce for a smoky-sweet vibe.
👩👧 Kid Tips
- Let kids sprinkle the cheese and bacon on top — they’ll feel like mini chefs.
- Serve with garlic sticks for dipping into the saucy spaghetti.
- Make “Cowboy Cups” by serving in muffin tins lined with biscuit dough for a fun, portable version.
🛒 Grocery Hacks
- Buy block cheese and shred it yourself — it melts better and costs less.
- Use store-brand beans and tomatoes to save a few dollars.
- Freeze extra bacon in small portions so you can grab just what you need.

♻️ Leftover Remix
- Cowboy Spaghetti Bake: Layer leftovers in a casserole dish, top with more cheese, and bake at 375°F for 20 minutes.

- Quesadilla Filling: Yes, spaghetti in a tortilla — trust me, it works.

Cowboy Spaghetti
Ingredients
- 1 package (12 ounces) spaghetti
- 8 bacon strips, chopped
- 1-1/2 pounds lean ground beef
- 1 large onion, diced
- 1 can (15 ounces) kidney beans, drained
- 1 can (15 ounces) tomato sauce
- 1 can (10 ounces) diced tomatoes
- 2 tablespoons chili powder

- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 3 cups shredded cheddar cheese, divided

Stir in beans, tomato sauce, diced tomatoes, chili powder, Worcestershire sauce, cumin, oregano and garlic powder.
- Drain spaghetti; stir into skillet. Stir in 1-1/2 cups cheese and half the bacon. Top with remaining 1-1/2 cups cheese. Bake until heated through, 20-25 minutes. Sprinkle with remaining bacon.

💭 Final Thoughts
Cowboy Spaghetti is the kind of meal that makes you feel like you’ve just fed your family a feast without spending all day in the kitchen. It’s hearty, budget-friendly, and endlessly adaptable. Plus, pairing it with homemade garlic sticks? That’s just showing off.
So there you have it — a dinner that’s part pasta, part chili, all comfort. Whether you’re wrangling a busy weeknight, feeding a hungry crew after soccer practice, or hosting friends for a casual game night, Cowboy Spaghetti is your new go-to. It’s the kind of recipe that doesn’t just fill bellies — it fills the room with that “mmm, what smells so good?” energy before anyone even sits down.
And here’s the thing: meals like this aren’t just about the ingredients. They’re about the little moments that happen around the table — the way someone always sneaks an extra sprinkle of cheese, the kid who insists on twirling spaghetti with a fork and spoon, the laughter that bubbles up when someone accidentally drops a noodle in their lap. Those are the memories that stick.
Pairing it with homemade garlic sticks and pizza crust? That’s not just dinner — that’s an event. It’s the kind of night where you linger a little longer, maybe play a board game afterward, maybe share stories you’ve told a hundred times but still laugh at anyway.
And because you know I’m all about building our little corner of the internet into a true gathering place, I want to see your spin on this. Did you go spicy? Did you sneak in extra veggies? Did you turn the leftovers into something totally unexpected? Share it with our hashtag so we can cheer each other on and swap ideas.
At the end of the day, recipes like Cowboy Spaghetti are more than just food — they’re a reminder that you don’t need fancy ingredients or hours in the kitchen to create something special. You just need a little creativity, a dash of love, and maybe a few extra napkins for the cheese strings.
So go ahead — tie on that apron, crank up your favorite playlist, and make tonight a Cowboy Spaghetti night. And when you do, know that somewhere out there, the rest of us are doing the same, one happy forkful at a time.
