Burst Cherry Tomato & Creamy Mozzarella Dip

Ingredients
- - 1 pint cherry tomatoes
- - 2 tbsp. olive oil
- - 1 tbsp. balsamic vinegar
- - Salt and pepper, to taste
- - 2 to 3 cloves garlic, minced
- - 10 ounces fresh mozzarella, chopped
- - 4 ounces ricotta
- - 4 tbsp. heavy cream
- - 3 tbsp. pesto

Instructions
Step 1: Roast the Tomatoes
Preheat your oven to 425ºF. In an 8x8 baking dish, combine cherry tomatoes, olive oil, balsamic vinegar, ¼ teaspoon salt, and a sprinkle of black pepper. Toss everything together to coat evenly.
Bake for 20 minutes, tossing halfway through, until the tomatoes burst and develop golden spots. Once done, immediately stir in minced garlic and let the mixture cool slightly.
Step 2: Prepare the Mozzarella Mixture
While the tomatoes are roasting, prepare the creamy mozzarella blend. In a food processor, pulse together mozzarella, ricotta, heavy cream, and ¾ teaspoon salt until smooth and spreadable.
