Breakfast Sliders
🍳 Breakfast Sliders — The Morning MVP You’ll Make on Repeat
If breakfast had a starting lineup, these sliders would be the captain, the crowd‑pleaser, and the one everyone’s talking about long after the game.

Some mornings call for something quick. Some mornings call for something indulgent. And then there are mornings that demand Breakfast Sliders — fluffy Hawaiian rolls stuffed with savory sausage, creamy eggs, melty cheddar, and a swipe of tangy‑sweet sauce, all baked until golden and sprinkled with everything bagel seasoning.
They’re perfect for feeding a crowd, impressing overnight guests, or making your family feel like they’ve woken up in a brunch café. Plus, they’re portable — so yes, you can totally eat one in your pajamas while standing at the kitchen counter.
💬 Reader prompt: Are you a “sit down with a plate” breakfast person or a “grab and go” slider snacker?
I love sliders because they are so easy to make and chuck full of yumminess! I don’t know a soul that doesn’t take a bite of these and leave happy!
There something about the size of a slider that just makes these a happy food!

Breakfast Sliders
Ingredients
- 12 Hawaiian Rolls
- 2 tbsp. mayonnaise
- 1 tbsp. dijon mustard
- 2 tsp. honey
- 1 lb. breakfast sausage
- 1/2 yellow onion, chopped
- 9 large eggs, divided
- 4 oz. cream cheese, cubed and softened
- 1 tsp. salt
- 12 tsp.black pepper
- 2 tbsp. butter
- 12 cheddar cheese slices
- everything bagel seasoning
Instructions
- Preheat oven to 375 degrees.
- In a small bowl, combine the mayonnaise, mustard, and honey.
- In a large nonstick skillet over medium heat, cook the sausage and onion, stirring frequently, until the sausage is no longer pink and the onion is softened, 8 to 10 minutes. Remove the sausage mixture to a plate and wipe out the skillet.
- In a medium bowl, whisk together 8 eggs, cream cheese, salt, and pepper.
- In the same nonstick skillet, melt the butter over medium-low heat. Add the eggs and let cook in a single layer for about 30 seconds. Stir, occasionally, for the next 1 to 2 minutes to create large curds of scrambled egg.
- Using a serrated knife, cut crosswise through all of the rolls at once to divide the top half from the bottom (keeping the biscuits attached to one another). Place the bottom half of the biscuits on a baking sheet. Spread with the mayonnaise mixture, then top with a single layer of sliced cheese. Add the sausage mixture in an even layer, then add the eggs in an even layer. Top the eggs with another single layer of sliced cheese. Top with the top half of the rolls.
- In a small bowl, beat the remaining egg white. Brush the top of the rolls with egg wash and sprinkle with everything bagel seasoning. Bake until the rolls are toasted and the cheese is melted, 10 to 12 minutes. Pull the biscuits apart and serve warm.

💭 Final Thoughts
These Breakfast Sliders are proof that mornings can be delicious, fun, and easy. They’re perfect for busy weekdays, lazy weekends, and everything in between. Plus, they’re endlessly customizable — you can keep them classic, make them spicy, or sneak in extra veggies.
They’re also a great make‑ahead option. Assemble the night before, cover, and bake in the morning for fresh, hot sliders without the rush.
Here’s the thing about these sliders — they’re more than just breakfast. They’re a reason to gather around the table, a way to make mornings feel special, and a guaranteed hit with anyone who tries them. They’re the smell of sausage sizzling in the skillet, the sight of gooey cheddar stretching between bites, and the sound of happy munching from every seat.
They’re also the kind of recipe that makes you feel like you’ve got your life together — even if you’re still in pajamas and your hair’s doing that “creative” morning thing. You can prep them ahead, bake them fresh, or even wrap them up for a road‑trip breakfast. They’re forgiving, flexible, and always delicious.
And the beauty of sliders is that they’re endlessly adaptable. Want to go full brunch mode? Add a layer of crispy hash browns or a fried egg on top. Feeling fancy? Swap the cheddar for brie and add caramelized onions. Feeding a crowd with mixed tastes? Make half spicy with jalapeños and pepper jack, and keep the other half classic for the purists.
They’re also a conversation starter. Put a tray of these on the counter and watch people gather — coffee in hand, chatting, laughing, and “just grabbing one more” until the tray mysteriously empties. They’re the kind of food that turns a regular morning into a memory.
So here’s my challenge to you: make them, share them, and tell me your twist. Did you go veggie? Did you add spice? Did you sneak one before anyone else got theirs? (No judgment — I’ve been there.) Snap a pic, post it, and tag it so we can all drool together.
💬 Reader prompt: Should we do a “Slider Series” next? I’m thinking BBQ chicken sliders, Philly cheesesteak sliders, and maybe even dessert s’mores sliders…
Until then, may your mornings be easy, your cheese be melty, your rolls be perfectly golden, and your breakfast table be full of smiles. Because if there’s one thing I know, it’s that a good slider can turn any day into a great one.
