I love soups! Especially in the Winter but heck, let’s be honest, they are fabulous any time of the year! What’s not to like? It’s a dish that you can make in one pan, only takes about 30 minutes to make, and it’s a complete meal! That should make anyone happy that’s make dinner!

I thought I knew what soup was my all time favorite but this one just blew it out of the water! I honestly wanted to lick my bowl clean!

TIPS AND TRICKS

 

  • GROUND BEEF: The leaner ground beef you use, the better! Be sure to drain off the excess grease before adding the veggies to the mix.
  • POTATOES: I love the golden yellow potatoes because they taste creamier to me but use what you have. Just make sure not to over cook them.
  • SOUR CREAM: If you don’t have or like sour cream, you can use cream cheese or Greek yogurt as a substitute. 
  • PROTEIN: Go ahead and switch it up! You can replace the hamburger with shredded chicken, sausage or ground turkey or chicken.
  • VEGGIES: There’s always room for more veggies! Mushrooms, green pepper, or zucchini would be fabulous!
  • SPICE IT UP: Do you love a little heat? Add a pinch of red pepper flakes to the mix.

 

STORAGE

 

  • You can keep leftovers in your fridge for up to 3 days in an airtight container.
  • You can absolutely freeze this soup! Place it in an airtight container and it should stay good for up to a month. FYI: Potatoes tend to get a little soft when they have been frozen, so you might want to leave them out.
  • Best way to reheat your soup is on the stove top or in a slow cooker. You don’t need to thaw it beforehand. Just make sure to stir frequently.

Creamy Hamburger Soup

Ingredients

  • 4 tablespoons butter
  • 1 pound lean ground beef
  • 1 small chopped onion
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 to 4 garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cups small cubed potatoes
  • 3 cups chicken broth
  • 1/4 cup flour
  • 1 cup milk
  • 1 cup heavy whipping cream
  • 2 cups shredded Cheddar cheese
  • 1/2 cup sour cream

Instructions

  1. In a Dutch oven on a medium heat, brown and crumble your ground beef. Drain the excess grease off the meat and leave the meat in the colander while you prepare the veggies.
  2. Melt butter in the same pot you prepared the hamburger, on a medium heat; add onion, carrots, celery, and garlic. Cook and stir until the veggies are tender, 5 to 7 minutes.
  3. Stir in salt and pepper. Add potatoes and broth and bring to a boil; reduce heat to low and simmer until potatoes are tender, 15 to 20 minutes.
  4. In a small bowl, combine heavy cream, milk, and flour and whisk until smooth, about 1 minute. Gradually add this to the soup. Stirring constantly. Bring to a boil; reduce heat to low and stir in cheese until melted. Add sour cream; stir until just heated through.
