Well, how’s your January going so far? I took down Christmas and now waiting for the next best thing to happen. lol!!!

When I think about recipes for January, I usually think about clean eating or comfort food. If it’s up to me, I would pick comfort food every, single, time! I do know that I should pick the other but January needs something going for it. It should be the food!

There are so many things right about baked oatmeal. It’s easy to make, you can make it the night before, great after school snack, oatmeal is a healthy choice and it’s so darn good!




  • SWEETENER: I used honey but if you don’t have any available, go ahead and use maple syrup, or corn syrup.
  • NUTS: I normally don’t cook with nuts because my husband has a nut allergy. If that is the same with your household, leave out the nuts or replace them with an almond, or your favorite nut!
  • ADD INS: Go ahead, don’t be shy, add raisins, cranberries or any dried fruit that you love!
  • TOPPINGS: Drizzle a little honey, and sprinkle with cinnamon. A dollop of yogurt or a slice of apple is so good! You can even eat this as a dessert! Add a scoop of ice cream and drizzle a little caramel on top!

  • 4 tbsp. (1/2 stick) butter, melted, plus more, softened, for pan
  • 3 c. rolled oats
  • 1 tsp. baking powder
  • 1/2 tsp. ground cinnamon, plus more for sprinkling
  • 1 tsp. salt
  • 1/2 tsp nutmeg
  • 2 large eggs
  • 2 1/2 cup milk
  • 1 cup heavy cream
  • 1/4 c. honey, plus more for drizzling
  • 2 tsps pure vanilla
  • 3 to 4 small green apples, cored, peeled, and chopped
  • 1/2 c. chopped walnuts


  1. Preheat oven to 350°. Grease a 13"-by-9" with softened butter.
  2. In a large bowl, whisk oats, baking powder, cinnamon, salt, and nutmeg.
  3. In a medium bowl, whisk eggs, milk, honey, vanilla, and melted butter. Add to dry ingredients and mix until just combined. Stir in apples and walnuts. Transfer mixture to prepared dish.
  4. Bake until oatmeal is just set and golden brown and apples are tender, 40 to 45 minutes. Let cool about 20 minutes. Serve warm with yogurt; drizzle with honey and sprinkle with cinnamon.
