Brownie Pie

If you love chocolate, you will love this recipe! The moist, chocolatey, brownie pie is too die for. The flaky pie crust just puts the finishing touch.

My youngest daughter loves brownies! All through the Summer it felt like we were making them every other week! We slowed the flow but when you need chocolate, you just need it and you need it right away! It was time for a little chocolate around here!

Brownies on their own are fabulous but, adding the layer of the crust just feels a little more fancy and you really can tell the difference!

 

TIPS AND TRICKS

CRUST: I used a store bought crust but if you have a great recipe, go ahead and make your homemade crust. You can do a graham cracker crust, just watch the cook time for that.

SMORE: You can add marshmallows at the end of the bake and toast them up for a different version of the pie. You also can spread some cookie dough on top of the batter before baking to turn it into a Brookie!

STORE AND REHEAT: Cover the pie tightly with plastic wrap, and place in the fridge. It should stay good up to 3 days!

FREEZE: This bad boy can be in the freezer up to 3 months. Just make sure to wrap it in a layer of plastic wrap, and foil. Let thaw overnight in the fridge before reheating.

GARNISH: Ice cream always pairs well with brownies! I love a little drizzle of either chocolate or caramel. A crumbled up Heath bar would make it heaven!

Ingredients

  • 1 pie crust , unbaked and thawed
  • 1/2 cup butter , melted
  • 1 cup sugar
  • 3 large eggs
  • 1 tablespoon vanilla
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup flour
  • 1 cup milk chocolate chips , divided

Instructions

  1. Preheat oven to 350 degrees.

  2. Whisk together melted butter, sugar, eggs and vanilla.

  3. Add the cocoa powder and flour and whisk until just combined.

  4. Stir in ¾ cup of the chocolate chips.

  5. Pour batter into pie crust.

  6. Sprinkle remaining chocolate chips over the batter.

  7. Bake for 40-45 minutes (tent with aluminum foil if pie crust is browning too quickly).
