We love the English Muffins from Costco and they make the most amazing English Muffin French Toast!

Now that I have time to make breakfast, I’m going to go to town. These will bring all the best flavors and what is better with french toast than fruit. Strawberries, raspberries, bananas’ and more!

 

We love all the fresh fruit and being home all the time means we will be eating a ton of fruit! Get ready for some delicious breakfast ideas and if you have English Muffins on hand, you are welcome!

 

 

English Muffin French Toast

Ingredients

  • 2 English muffins
  • 1 eggs
  • 1/2 cup milk
  • 1 tbsp sugar
  • 1 1/2 tbsp butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp cinnamon

 

 

English Muffin French Toast

Directions

  1. In a medium bowl, add the eggs and whisk until yolk and whites are well combined. Add the milk, sugar, vanilla extract, and ground cinnamon.
  2. Pour the egg mixture into a shallow, rimmed baking pan. Cut each English muffin in half and place into the custard mixture with the cut side down. Let soak for 10 to 20 minutes. Flip the buns around and soak 5 minutes more.
  3. Add 1 tablespoon of butter to a large non-stick frying pan, skillet, or griddle and melt over medium heat. When melted, cook the 2 to 3 muffins, cut side down, for 3 to 4 minutes or until crisp and golden brown. Then turn around and fry the other side for 2 to 3 minutes. Transfer to a plate and repeat with the remaining English muffins.
  4.  Serve warm and pass with powdered sugar, syrup, whipped cream, and fresh fruit.

Breakfast Potatoes! There are times when we just love having breakfast foods for dinner. A few Sundays ago that was the case! My husband was so excited to try new recipes so we could share them with you! Let me tell you, he is really picky about what I put on the blog!! There are times that I make something and he will say, ” that is not up to the blog standard”!

Now you know, we don’t put everything we make on the blog because Mikie won’t have it! At the Lewis home, when we are making breakfast potatoes, they are usually smothered in cheese, but not this time! This recipe is more focused on the flavors of the veggies and it was a nice change.
