Frito Pie Casserole is a family favorite meal made with ground beef, taco seasoning, chili seasoning, cheese, chili beans and Fritos. This is amazing for dinner anytime and everyone will fall in love.

This Summer I have been looking for dinner ideas that our quick and easy but have the feel of home! You know what I mean. Those meals that take you back to a time that feels so comfortable, and so cozy!

 

I don’t know of many people that want to be stuck in a hot kitchen while everyone is enjoying the Summer nights! This dish will save you! It comes together so easy and I bet you have most of the ingredients in your pantry! And, the FLAVOR……. is incredible!

 

 

 

FRITO PIE TOPPINGS

Frito pie is like a blank canvas, you top this baby with your favorite toppings! Here are a few options!

  • Sour Cream
  • Guacamole
  • Green Onions
  • Jalapeno
  • Black Olives
  • Diced Tomatoes
  • Salsa

 

 

CAN YOU FREEZE THIS?

 

The answer is YES! You can freeze Frito pie either before or after baking.  To freeze before baking, cover tightly and freeze up to 3 months. To freeze after baking, allow the casserole to cool room temperature then cover tightly and freeze for up to 3 months. 

To cook from frozen, add 30 – 45 minutes of cook time to your dish.

Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 package taco seasoning & water as indicated on package
  • 1 tablespoon chili powder
  • 1 10 ounces salsa
  • 1 10 ounces tomato sauce
  • 15 ounces chili beans, not drained
  • 1 can corn drained
  • 1 bag Fritos® corn chips divided, about 5 ½ cups
  • 2 1/2 cups Mexican cheese blend divided, shredded, 8 ounces
  • 1 bunch of green onions chopped

Instructions

  • Preheat oven to 350°F. Grease a 9"x13" casserole dish.

    Brown ground beef and onions in a skillet, drain fat. Stir in taco seasoning, chili powder, and water.

  • Bring to a boil, reduce heat and simmer until thickened. Stir in diced tomatoes, tomato sauce, corn & beans. Simmer an additional 5 minutes.

  • Add 4 cups of Frito chips to the bottom of prepared dish. Sprinkle with 1 1/2 cups of cheese.

  • Spread beef mixture over top and top with remaining cheese.

  • Bake 20 to 25 minutes or until cheese is melted.

  • Top with remaining chips and desired toppings.

Notes

You can replace the beef with chicken or turkey.
