Instant Pot Meatloaf

 

 

 

These days I’m lucky if I make it through work and then I come home and want to literally lay on my face, but can’t (baby bump). Cooking is something that I truly enjoy so making dinner is fun and easy for me. I hate the clean up part of it, so that is now Matthews job.

However, if it’s something simple I don’t mind cleaning it up. I love crock pot and instant pot meals right now, easy clean up and great leftovers if you are smart with what you make! These week we are going with meatloaf, chicken thighs, and pork mac and cheese casserole. We are also try to make a twist on dinner that we think the kids will eat. Even though they don’t always eat everything!

 

 

 

Ingredients

    • 1 cup water
    • 2 pounds lean ground beef
    • 1 small onion chopped
    • 3 Tablespoons fresh parsley chopped
    • 3/4 cup Italian Bread Crumbs
    • 1/2 cup milk
    • 1 Tablespoon Worcestershire sauce
    • 2 large eggs
    • 1 teaspoon garlic powder
    • salt and pepper
  • 1/4 cup ketchup
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon brown sugar

 

 

 

 

Directions

 

 

  1. In a large bowl combine beef, onion, parsley, Italian breadcrumbs, milk, Worcestershire sauce, eggs, garlic powder, salt and pepper. Use your hands to mix until combined.
  2. Place a sheet of aluminum foil on the counter. Shape the meatloaf into a loaf and shape the sides of the aluminum foil around the meatloaf. Pour 1 cup of water into the bottom of the pot. Then place on top of the fry plate in the instant pot.
  3. In a small bowl whisk together ketchup, vinegar and brown sugar. Brush half of the mixture on the top of the meatloaf.
  4. Cover and turn the instant pot to the sealing position. Pressure cook on manual high for 30 minutes. Release the pressure with the quick release. Check the meatloaf to see if it has reached an internal temperature of 155 degrees.
  5. Remove the meatloaf from the pan and let it rest. Brush the remaining glaze on top.
