Banana Oatmeal Muffins
Grey has been begging for banana oatmeal muffins for over a week. Really, he would eat any muffins, but he kept saying banana muffins!
I spoiled his dinner by making these before dinner. The frozen lasagna we made for dinner tonight took 2 hours to make and I made, baked these and ate some all in the time it took for the lasagna to bake. It was nuts. I put them in the oven at the same time! Anyways, Matt was worried they would taste like lasagna, they didn’t.
It was great! It was quite a crazy afternoon, Grey helped me make these and then ate then threw a fit because we asked him to eat 1 bite of his lasagna and screamed bloody murder on the floor and cried. Nothing worked to get him to eat it.
We ended up cuddling on the couch watching Bizarre Dinosaurs on Disney+. He passed out about 20 minutes into it and was snoring just like his daddy. It was absolutely adorable, I enjoyed it as long as I could before I thought my arm was going to fall off. I would spoil him with muffins any day if I get the snuggles!
- 1 ½ Cups oatmeal (old fashioned oats)
- 1 ¼ Cups flour
- ½ cup sugar
- 1 ½ teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon cinnamon
- pinch ground nutmeg
- 1 whole egg
- ¼ cup butter, softened
- 1 teaspoon vanilla
- 3 whole ripe bananas (mashed, 3 bananas equals about 1 ½ cups)
- ½ cup oatmeal (old fashioned)
- ¼ teaspoon cinnamon
- 2 Tablespoons brown sugar
- 2 Tablespoons melted butter
In a large bowl mix oatmeal, flour, baking powder, baking soda, cinnamon, nutmeg and sugar together.
In a smaller bowl mix egg, oil and vanilla. Add to dry ingredients and stir. Stir in bananas
Divide into 12 lined muffin tins.
In another bowl combine topping ingredients. Sprinkle over muffin batter.
Bake at 375 for 20 minutes
