We’re trying to be more healthy at our house these days, trying being the operative term. Healthy Turkey Tacos was a great healthy meal!
With COVID going on, Matt is working from home, and with having both boys home it gets kind of hectic. I just need healthy recipes that are quick and easy, but also delicious. Matt loves tacos and so do I. Turkey tacos were very good, you can’t even tell it’s turkey and not ground beef. I was happy to find a healthy alternative to one of our favorite meals!
- 1 tablespoon avocado oil
- 1/2 medium onion, diced
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 tablespoon minced garlic
- 1 pound ground turkey
- 1 1/2 teaspoons chili powder
- 1 1/4 teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
Heat oil over medium-high heat. Add onions and peppers and sauté for 6-7 minutes until veggies start to soften.
Add garlic, turkey, chili powder, cumin, paprika, oregano, and 2 tsp. salt, and pepper. Break turkey up with a large spoon or spatula and cook for 7-10 minutes until cooked through.
Once the turkey is cooked, taste, and adjust the salt level if desired. Remove from heat and serve.
Serve with tortillas and toppings such as salsa, guacamole, sour cream, chopped lettuce, diced tomato, cheese, or any other of your favorite taco toppings.
