My sister Andie always tells me that the only recipes I ever make are with apples. They are my favorite and the other night Matt made these Apple Caramel Apple Pies. They were delicious!
Sometimes you need a little apple pie in your life. Nobody understands that more than me. For some reason, this is one of my absolute favorite flavors.
Matt knows this about me so he always finds me the coolest recipes! Also, he likes to add his own twist, and you can’t go wrong with caramel and apples!
- 4 Honey Crisp apples
- 3 Granny Smith apples
- 2 teaspoons ground cinnamon
- 3/4 cup sugar
- 1 pastry crust
- 2 tablespoon salted butter
- 1 cup Caramel squares
Finely dice 3 of the Granny Smith apples. Add to a small saucepan with cinnamon, and sugar. Cook over medium heat, stirring occasionally, for about 20-25 minutes. Remove from heat.
Preheat oven to 375 degrees F.
Cut off tops of 4 remaining apples. Core and carefully scoop out the center of the apples and place in a baking dish. When a filling is slightly cooled, divide and fill hollowed apples.
- Melt caramel squares in the microwave 30 seconds at a time stirring until smooth. Top over the filling.
Using a pizza cutter, or very sharp knife, cut pie crusts into 1/4″ strips and lay in a lattice pattern across the top of apples. Trim excess pie crust around the edges, then brush tops with melted butter.
Place apples in oven and bake at 375 degrees F for 25-30 minutes or until tops are golden brown.
Remove from oven and let cool for 10-15 minutes before serving. Sprinkle with extra cinnamon and sugar, if desired.
