Easy Slow Cooker Chicken and Sweet Potato Soup

Slow Cooker Chicken and Sweet Potato Soup

Slow Cooker Chicken and Sweet Potato Soup is a delicious way to enjoy fresh sweet potatoes. Making slow cooker soup recipes is an easy way to enjoy the flavors of fresh in-season vegetables all year long, like sweet potatoes.

Happy Presidents Day!! It’s freezing outside! I hate the cold weather and with softball coming up I am hoping the snow will melt in a timely manner. In the meantime, nothing hits the spot quite like soup.

This is a healthy soup that Matt and I made with the ingredients we had in our kitchen! Matt loves to put his own spin on everything, sometimes it’s great, sometimes not! This time was a success! Enjoy!

Slow Cooker Chicken and Sweet Potato Soup

4 chicken breasts, cubed
2 sweet potatoes, peeled and cubed
2 yellow potatoes, cubed
4 carrots, sliced
3 celery stalks
28 oz whole tomatoes, canned
1 teaspoon salt
1 teaspoon black pepper
1/2 cinnamon
1/4 teaspoon nutmeg
1 teaspoon paprika
1/4 cup basil
2 cups chicken broth

1. Combine all ingredients in the crockpot. Cover and cook on low 6 to 8 hours or high 3 to 4 hours. You may want to add some extra salt. Then we also added some sour cream.
