Sweet Potato Asparagus Hash

This Sweet Potato and Asparagus Hash is a quick and easy breakfast or brunch recipe.
 
 
 
 
 

I love Sweet potatoes! They are literally one of my most favorite foods. Especially sweet potato fries.

 

When we go somewhere and they have sweet potato fries, we try them. We had some leftover asparagus and sweet potatoes from our meals this week. This is what we came up with.

 

 

 
 

 

Ingredients

2 medium sweet potatoes, cubed
1 bunch of asparagus, cut into 3rds
1 tablespoon olive oil
2 garlic cloves, minced
1 1/2  teaspoons of kosher salt
1 teaspoon onion powder

 

 

Directions

1. Heat a saute pan to medium heat. Throw the olive oil, the garlic cloves, and the cubed sweet potatoes. Cook for 7 to 10 minutes until potatoes are soft.
2. Then put in the asparagus and remaining ingredients. Along with a 1/4 cup of water to steam the asparagus. Place the lid on the pan and cook for 5 minutes.
3. Continue to cook until the water has left the pan. Add salt and pepper according to your taste.
