These baked sweet potato slices are incredibly easy to make and such a delicious side dish for any meal. A perfect side for your holiday dinner this year.
Mmm, these are my new favorite snack! It’s so easy and good for you, plus there are endless ways to prepare them. I make a batch of these at least two times a week and everyone loves them.
The great thing about sweet potatoes is that they are only 180 calories each, and they are full of vitamins and minerals. Plus, their sweet flavor is irresistible to small children, so your kids will gladly eat these.
I also think they’re great baked whole with their skin on and then topped with a little coconut oil and cinnamon. I could go on and on… Here’s how I do them.
Sweet Potato Circles
2 large sweet potatoes
Seasonings of your choice
Preheat over to 400 degrees. Slice two large sweet potatoes being careful to slice them evenly so they cook at the same speed.
Arrange on two cookies sheets, so that they don’t overlap. Drizzle with olive oil and then toss them to make sure both sides of the potato has a little oil on them.
Sprinkle with your favorite topping. Some of my favorites are Cumin and Salt, Cinnamon and Coconut sugar, Garlic Powder and Himalayan Pink Salt, and Dry Ranch Dressing Mix.
Bake at 400 degrees for about 20 minutes, and then flip them over and bake for another 10 minutes, or until they are starting to get crispy and brown.
Oven times vary so keep an eye on them so they don’t burn!
