🍠✨ SWEET POTATO CIRCLES
Crispy edges, soft centers, endless seasoning options — the easiest side dish that somehow steals the whole show.
Crispy, caramelized, golden, and dangerously addictive — these Sweet Potato Circles are the snack‑slash‑side‑dish you’ll be making on repeat.
GRAB YOUR SHEET PANS, YOUR FAVORITE APRON, AND YOUR INNER “I CAN TURN ANY VEGETABLE INTO A FULL‑BLOWN OBSESSION” ENERGY — because today’s recipe is so simple, so crispy, so wildly snackable that your family may actually start calling you The Sweet Potato Sorceress of Utah County.
We’re making SWEET POTATO CIRCLES — the golden, caramelized, lightly crisp, perfectly seasoned little rounds that somehow manage to be a snack, a side dish, a meal prep hero, AND a “don’t talk to me while I’m eating these” moment. They’re easy. They’re gorgeous. They’re healthy‑ish. And they’re the kind of recipe that makes people say, “Wait… why are these so good?”
Let’s talk vegetables. Not the “I guess I’ll eat this because I’m supposed to” vegetables. Not the “this tastes like sadness and obligation” vegetables. Not the “I roasted these for 45 minutes and they still taste like nothing” vegetables.
I’m talking about REAL vegetables — the kind that make your kitchen smell amazing, the kind that make your family hover like snack‑seeking ninjas, the kind that make you feel like a culinary genius even if you’re still wearing yesterday’s leggings.
These Sweet Potato Circles are:
- crispy on the outside
- soft on the inside
- naturally sweet
- endlessly customizable
- kid‑approved
- adult‑approved
- meal‑prep friendly
- budget‑friendly
- and honestly? A little bit magical
They’re the kind of recipe that makes people ask, “WHAT DID YOU PUT ON THESE?” The kind that makes your kitchen feel warm and welcoming. The kind that makes you feel like a veggie queen — even if your hair is in a messy bun and you’re using a spatula as a microphone.
Perfect for: • weeknight dinners • healthy snacks • meal prep • picky eaters • “I need something delicious immediately” moments
💬 Reader prompt: Are you team “savory seasoning” or team “sweet cinnamon sugar”?
Mmm, these are my new favorite snack! It’s so easy and good for you, plus there are endless ways to prepare them. I make a batch of these at least two times a week and everyone loves them.
The great thing about sweet potatoes is that they are only 180 calories each, and they are full of vitamins and minerals. Plus, their sweet flavor is irresistible to small children, so your kids will gladly eat these.
I also think they’re great baked whole with their skin on and then topped with a little coconut oil and cinnamon. I could go on and on… Here’s how I do them.
Sweet Potato Circles
2 large sweet potatoes
olive oil
Seasonings of your choice
Directions:
Preheat over to 400 degrees. Slice two large sweet potatoes being careful to slice them evenly so they cook at the same speed.
Arrange on two cookies sheets, so that they don’t overlap. Drizzle with olive oil and then toss them to make sure both sides of the potato has a little oil on them.
Sprinkle with your favorite topping. Some of my favorites are Cumin and Salt, Cinnamon and Coconut sugar, Garlic Powder and Himalayan Pink Salt, and Dry Ranch Dressing Mix.
Bake at 400 degrees for about 20 minutes, and then flip them over and bake for another 10 minutes, or until they are starting to get crispy and brown.
Oven times vary so keep an eye on them so they don’t burn!
🍽 Directions
Step 1: Prep the Oven
- Preheat oven to 400°F.
- Line two baking sheets with parchment or foil.
Step 2: Slice the Sweet Potatoes
- Slice sweet potatoes into even rounds.
- Aim for ¼–½ inch thickness.
- Even slices = even cooking = no burnt edges.
Step 3: Arrange & Oil
- Spread slices on baking sheets without overlapping.
- Drizzle with olive oil.
- Toss to coat both sides — shiny potatoes = crispy potatoes.
Step 4: Season Like You Mean It
Choose your vibe:
- Savory: cumin + salt
- Sweet: cinnamon + coconut sugar
- Classic: garlic powder + Himalayan pink salt
- Ranchy: dry ranch seasoning mix
Sprinkle generously. Your potatoes deserve it.
Step 5: Bake
- Bake for 20 minutes.
- Flip each slice.
- Bake another 10 minutes, or until golden and crisp on the edges.
Step 6: Serve
- Serve hot.
- Try not to eat the entire tray before dinner.
