🥔 Stuffed Beef Potatoes — Comfort Food That’s Basically a Hug on a Plate

If dinner could wrap you in a blanket and tell you everything’s going to be okay, this would be it.

Some recipes are quick. Some recipes are fancy. This one? It’s both. Stuffed Beef Potatoes are the kind of dish that looks like you’ve been cooking all day, but they’re secretly simple enough for a weeknight.

We’re talking fluffy, buttery potatoes mixed with sour cream and mozzarella, topped with savory ground beef in marinara sauce, and baked until bubbly. It’s hearty, cheesy, and just the right amount of indulgent.

💬 Reader prompt: Are you a “pile it high” potato person or a “neat little scoop” kind of eater?

I have seen this recipe every time I would scroll through Facebook. I tried to watch the video to figure out what went into it but all it showed was the ingredients! It seemed to be something worth looking into because it was everything that makes me happy all nestled in homemade mashed potatoes! Win! Win!

I bet you have most of these ingredients in your pantry! Since I didn’t know the measurements that they were using and of course, I had to put my own spin on it, I didn’t know how it was going to turn out for sure. I knew it was going to be good, but take my word for it, it’s delicious!

Stuffed Beef Potatoes Recipe

Ingredients

  • 5 to 6 Potatoes, diced
  • 1 Teaspoon of salt
  • 1/4 cup butter
  • 1/4 cup sour cream
  • 1 teaspoon garlic salt
  • 1 cup Mozzarella Cheese
  • Meat
  • 1 small onion, diced
  • 3 to 4 garlic cloves, minced
  • 1 lb ground beef
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 1 1/4 cup marinara sauce

Instructions

  1. In a saucepan, add the diced potatoes into dices and add enough water and a pinch of salt to cover all the potatoes.
  2. Add to a pot the salt and let the potatoes boil for 15 minutes or until tender.
  3. After this indicated time, drain all the water and transfer the potatoes to a bowl, add the butter, garlic salt and sour cream to taste, mash to the consistency that you like.
  4. Now divide this potato mixture into 4 to 6 equal parts.
  5. Grab one of these parts and using your hands, shape it into a ball, then make a well in the center of the potato ball, shaping it into a scoop.
  6. Repeat this process with all the potato mixture.
  7. Transfer all these 4 to 6 potato cups to a baking dish
  8. After that, into a skillet over medium-low heat, add the onion, the crushed garlic cloves and stir until golden brown.
  9. Add the ground beef and stir well. Drain juices.
  10. Season with the salt, and the black pepper, add the marinara and stir all the ingredients very well for 2 minutes, then set aside.
  11. Back to the potato cups, sprinkle grated mozzarella cheese into each of them, and stuff as much of the ground beef mixture into each potato cup and equally divide the rest of the grated mozzarella cheese all over them.
  12. Bake in a preheated oven at 350 degrees for 20 minutes.

💭 Final Thoughts

These Stuffed Beef Potatoes are proof that comfort food can be easy, crowd‑pleasing, and downright addictive. They’re perfect for feeding a group, but they also work for a cozy family dinner when you want something a little different.

They’re also endlessly adaptable — you can keep them classic, make them spicy, or swap in your favorite cheese. And because they’re baked in one dish, cleanup is a breeze.

Here’s the thing about these potatoes — they’re more than just dinner. They’re a reason to gather, a centerpiece for casual get‑togethers, and a guaranteed way to make people hover near the kitchen. They’re the smell of garlic and marinara mingling in the oven, the sight of cheese melting into creamy potatoes, and the sound of happy chatter over plates of warm comfort food.

They’re also a reminder that the best recipes are the ones you can make your own. You can follow them exactly, or you can play — swap the cheese, change the seasoning, add a surprise topping. They’re forgiving, flexible, and always delicious.

And let’s be real: serving stuffed beef potatoes automatically makes you the hero of the night. Someone will inevitably ask for the recipe, and you’ll get to smile knowingly as you hand it over.

So here’s my challenge to you: make them, share them, and tell me your twist. Did you go spicy? Did you sneak in extra veggies? Did you eat one straight from the pan before anyone else got theirs? (No judgment — I’ve been there.) Snap a pic, post it, and tag it so we can all drool together.

💬 Reader prompt: Should we do a “Comfort Food Classics” series next? I’m thinking cheesy chicken casserole, loaded baked potato soup, and maybe even a dessert bread pudding…

Until then, may your potatoes be fluffy, your beef be savory, and your cheese be perfectly melty.
