If you’ve been looking for a chicken recipe that’s equal parts bright, bold, and ridiculously juicy, this is it. These Citrus Garlic Grilled Chicken Thighs are marinated in fresh orange and lime juice, kissed with garlic and oregano, and grilled to smoky perfection.

It’s the kind of recipe that works for everything:

  • Backyard BBQs
  • Meal prep lunches
  • Family dinners that need to impress without stress
  • That random Tuesday when you just want something really good

And the best part? The marinade takes less than 5 minutes to throw together — then your fridge does all the work.

I know. I’m on a taco kick. Matt got me a tortilla press for my birthday and we have been trying to perfect the best corn tortilla recipe. I’m making all the taco meat recipes and trying to find my favorites.

This one is definitely my top 5 taco meat recipes. I love a good grilled chicken, this was so good with our homemade tortillas, but the tortillas are kind of ugly, so don’t judge those in the photo. They tasted great, just need a little tweeking. Give the chicken a try though! Pollo Asado for the win!

👩‍🍳 Cooking Tips for the Juiciest Chicken

  • Don’t skip the citrus — It’s the secret to tender, flavorful meat.
  • Overnight is best — The longer the marinade, the deeper the flavor.
  • Use a thermometer — No guessing; 165°F–175°F is your sweet spot.
  • Let it rest — Keeps the juices in the chicken, not on your cutting board.
  • Grill with the lid closed — Helps lock in smoky flavor and even cooking.

🎨 Recipe Variations

  • Spicy Citrus — Add 1–2 teaspoons chili flakes or a diced jalapeño to the marinade.
  • Herb Lovers — Toss in fresh cilantro or parsley before grilling.
  • Sweet & Smoky — Swap brown sugar for honey and add extra smoked paprika.
  • Citrus Trio — Add lemon juice for a triple-citrus punch.
  • Mediterranean Twist — Add rosemary and thyme for a different flavor profile.

🧒 Kid Tips

  • Slice chicken into strips for easy dipping.
  • Serve with mild sides like buttered corn or mac and cheese.
  • Make mini chicken sliders with Hawaiian rolls.
  • Keep spice levels low for sensitive palates.

🛒 Grocery Hacks

  • Buy chicken in bulk — Freeze in marinade for ready-to-grill meals.
  • Citrus juice cubes — Freeze fresh juice in ice cube trays for quick use.
  • Store-brand olive oil — Works perfectly for marinades.
  • Mexican oregano — Stock up; it’s more aromatic than regular oregano.
  • Onion & garlic powder — Buy in larger containers to save money.
