🥞✨ Homemade Vanilla Crepes – The Fancy Breakfast That’s Secretly Easy
“If pancakes are your sweet, dependable best friend, crepes are her effortlessly chic cousin who just came back from a Paris vacation.”

We did these on St. Patrick’s day, so don’t mind the green! With our fancy little crepe maker it was an easy breakfast idea. Since we didn’t catch our leprechaun it helped to cheer up the kids.
I just used food coloring, we also made our favorite filling with marshmallow fluff. All the kids loved it and I know that is a shocking statement coming from me since my kids are the pickiest kids on the planet! Enjoy!
Here’s the thing about crepes: they sound fancy, like you should be wearing pearls or a beret and sipping espresso while making them. But in reality? Crepes are the easiest way to elevate an ordinary breakfast (or lunch… or dinner… or dessert) into something that feels like a special occasion.
I first started making crepes when I realized I could whip up the batter the night before, store it in the fridge, and look like the hostess of the year the next morning with practically no effort. The secret? It’s all about that silky, whisper-thin batter and a hot, butter-kissed skillet.
They’re endlessly versatile, too. You can fill them with fruit and cream for brunch, Nutella and bananas for an after-school snack, or ham and cheese for lunch. And the best part? You don’t need a plane ticket to France. Your kitchen will smell like a Parisian café in under an hour.

Perfect Crepe Recipe
Ingredients
- 6 Tablespoons salted butter
- 2 cups all-purpose flour (spooned & leveled)
- 2 Tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 1/2 cups milk, at room temperature
- 1 cup water, at room temperature
- 4 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
Directions
- Melt & Cool the Butter – Microwave or melt on the stove until liquid. Let it cool for about 5 minutes (warm is fine, hot will cook the eggs too soon).
- Blend the Batter – In a blender or food processor, combine melted butter, flour, sugar, salt, milk, water, eggs, and vanilla. Blend 20–30 seconds until you have a silky-smooth batter that looks like cream.
- Chill Time – Cover the blender or transfer batter to a bowl with a lid. Refrigerate for 30–60 minutes (or up to 1 day). This helps the flour hydrate and the bubbles settle for perfectly thin crepes.
- Heat the Pan – If you have a crepe maker, now’s its moment to shine. If not, use an 8-inch skillet over medium heat, generously greased with butter.
- Pour & Swirl – Add about 3–4 tablespoons of batter to the center of the hot skillet. Tilt and twirl the pan so it spreads into a thin circle. The thinner, the better for that delicate crepe texture.
- Cook & Flip – Cook for 1–2 minutes, until the bottom is set and slightly golden. Flip carefully and cook the other side for about 30 seconds.
- Stack & Repeat – Transfer each crepe to a plate and keep going, buttering the pan between each one for golden edges.
- Fill & Serve – Crepes are delicious warm or at room temperature. Pile on your favorite fillings, fold or roll, and serve with a smile.

👩🍳 Cooking Tips for Foolproof Crepes
- Rest the batter – This is the magic step for tender, tear-resistant crepes.
- Temperature check – Too hot and your crepes crisp before they spread; too cool and they’ll be pale and limp.
- First crepe = test crepe – The first one is your warm-up. Don’t judge yourself — think of it as a snack for the chef.
- Generous buttering – Keeps crepes from sticking and adds a gorgeous golden edge.
- Thin is in – Resist the urge to pour too much batter — you want whisper-thin layers.
🌀 Recipe Variations
- Sweet Classic – Strawberries + whipped cream, drizzled with chocolate sauce.
