💍 Marry Me Pasta — The Dish That Might Just Propose Back

They say the way to someone’s heart is through their stomach — and this Marry Me Pasta is basically a diamond ring in a bowl.

Some recipes are delicious. Some are comforting. And then there are recipes that make people stop mid-bite, look at you with wide eyes, and say, “Oh my gosh… you have to make this again.” That’s Marry Me Pasta.

It’s creamy, cheesy, and just the right amount of indulgent. The sauce clings to every piece of pasta like it’s in a committed relationship (pun fully intended), and the sun-dried tomatoes bring a tangy pop that keeps things interesting. Add tender rotisserie chicken and a sprinkle of red pepper flakes, and you’ve got a dish that’s equal parts cozy and impressive.

This is the kind of recipe you can whip up on a weeknight but also serve at a dinner party without breaking a sweat. And because I know my readers love a little extra, I’m giving you bonus recipes for homemade pizza crust and garlic sticks so you can turn this into a full Italian-inspired feast.

So grab your apron, pour yourself a little something to sip while you cook, and let’s make a pasta that could very well change your relationship status.

I thought this was the perfect dish to start out the week of love! If you are looking to get a proposal or even if you have been married a handful of years, this will help you get the results you want. lol!!! Yes, this is also great for the family.

I love skillet dinners because it seems to bring all the flavors together and all you need to add is a side salad or a delicious dinner roll. I didn’t even mention the best part, it’s done in less than 30 minutes.

🧑‍🍳 Cooking Tips

  • Pasta Shape Matters: Rigatoni is perfect because the sauce clings inside those ridges, but penne or shells work too.
  • Sun-Dried Tomato Tip: Pat them dry before adding so you don’t get extra oil in the sauce.
  • Cheese Quality: Freshly grated parmesan melts smoother than pre-shredded.
  • Heat Control: Add red pepper flakes early for a mellow heat, or sprinkle on top at the end for a spicy kick.
  • Creamy Boost: If you want it extra silky, stir in a tablespoon of cream cheese at the end.

🎨 Recipe Variations

  • Veggie Boost: Add spinach, roasted red peppers, or sautéed mushrooms.
  • Seafood Swap: Use shrimp instead of chicken for a coastal twist.
  • Bacon Lovers: Crisp up some bacon and crumble it over the top before serving.
  • Herb Upgrade: Stir in fresh basil, thyme, or parsley for a fragrant finish.
  • Lighter Version: Swap half the cream for milk and use grilled chicken breast.

👩‍👧 Kid Tips

  • Let kids sprinkle the parmesan on top — they’ll feel like mini chefs.
  • Serve with garlic bread for dipping into the sauce.
  • Make “pasta cups” by serving in muffin tins lined with foil for fun portions.
  • If your kids are spice-sensitive, skip the red pepper flakes.

🛒 Grocery Hacks

  • Buy rotisserie chicken when it’s on sale — shred and freeze portions for quick meals.
  • Store-brand pasta and cream are just as good as name brands.
  • Parmesan wedges are cheaper per ounce than pre-grated and last longer.
  • Sun-dried tomatoes are often cheaper in bulk bins than in jars.
  • Stock up on pasta during sales — it lasts forever and you’ll always have a quick dinner option.

♻️ Leftover Remix

  • Pasta Bake: Transfer leftovers to a baking dish, top with mozzarella, and bake until bubbly.
  • Soup Starter: Add chicken broth to turn it into a creamy pasta soup.
  • Stuffed Peppers: Spoon into halved bell peppers, top with cheese, and bake.
  • Flatbread Topping: Spread over flatbread, sprinkle with cheese, and broil.
  • Lunchbox Hero: Pack cold in a thermos for a next-day lunch that still tastes amazing.

Marry Me Pasta

Marry Me Pasta

Ingredients

  • 1 1/2 pounds rotisserie chicken, cut into 1-inch pieces
  • 1 lb ounces Rigatoni pasta
  • 2 tablespoons butter
  • 1 small onion, diced
  • 3 to 4 garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • a pinch of red pepper flakes (or more, if you like the heat)
  • 1 1/2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1 1/2 cups parmesan cheese grated
  • 1/2 cup sun-dried tomatoes, drained

Instructions

  1. Heat a large pot of salted water on the stovetop. Add the pasta and cook until al dente, according to package directions. Drain the pasta, reserve 1/2 cup of pasta water, and set aside.
  2. Heat the butter in a large skillet over medium heat. Add the diced onion and minced garlic and cook until fragrant.
  3. Pour the chicken stock into the pan and deglaze it, scraping all the browned bits off the bottom. Add the red pepper flakes, and bring the chicken stock to a low simmer.
  4. Turn the heat down to medium-low. Add the heavy cream and Parmesan cheese to the pan. Stir until the sauce is warm and the cheese is melted. Use reserved pasta water to thin out the sauce, if needed.
  5. Add the cooked pasta, chicken and sun dried tomatoes to the sauce and stir well to combine.
  6. Garnish with fresh parsley, if desired. Serve immediately.
