🥔🧀 Loaded Meatloaf Casserole — Comfort Food Royalty in One Pan

Because if you’re going to do comfort food, you might as well go all in with meat, potatoes, cheese, and bacon.

This Loaded Meatloaf Casserole is the ultimate mash-up of two comfort food legends: juicy, flavorful meatloaf and creamy, cheesy loaded mashed potatoes. It’s hearty enough to feed a hungry family, easy enough for a weeknight, and indulgent enough to make you feel like you’re treating yourself.

It’s:

  • One-pan magic — less cleanup, more eating.
  • Crowd-pleasing — even picky eaters will ask for seconds.
  • Make-ahead friendly — assemble earlier, bake later.
  • Perfect for busy seasons — no fussy steps, just big flavor.

With school back in session and the kids busy with their Fall sports, it’s always good to have a recipe that you can throw together quickly, and that you don’t have to fight with them on whether or not they will eat it.

This is it! It has all the feel good ingredients that make you feel right at home! I love casseroles because the whole meal is in just one pan! Heck, I bet you have most of the ingredients on hand right now!

👩‍🍳 Cooking Tips for the Best Casserole

  • Don’t overmix the meatloaf — keeps it tender.
  • Drain potatoes well before mashing to avoid watery mash.
  • Shred your own cheese — melts creamier than pre-shredded.
  • Bake meatloaf layer first — ensures it’s fully cooked before topping.
  • Let it rest — helps layers set for cleaner slices.

🎨 Recipe Variations

  • Spicy BBQ — Use chipotle BBQ sauce and pepper jack cheese.
  • Veggie Boost — Add a layer of peas, corn, or green beans between meatloaf and potatoes.
  • Sweet Potato Swap — Use mashed sweet potatoes for a fall twist.
  • Italian Style — Swap BBQ sauce for marinara, cheddar for mozzarella, and top with fresh basil.
  • Breakfast Version — Use sausage instead of beef, top with scrambled eggs and cheddar.

🧒 Kid Tips

  • Let kids sprinkle the cheese and bacon — they’ll feel like kitchen rockstars.
  • Serve with ketchup or ranch for dipping.
  • Cut into squares for easy hand-held portions.
  • Use mild cheddar to keep flavors familiar.

🛒 Grocery Hacks

  • Buy ground beef in bulk — portion and freeze for quick meals.
  • Potatoes on sale? — store in a cool, dark place for weeks.
  • Bacon trick — cook extra and freeze crumbles for future recipes.
  • Cottage cheese — buy large tubs; it’s cheaper and lasts longer.
  • Cheese blocks — shred and freeze for better melt and flavor.

Loaded Meatloaf Casserole

Meatloaf Casserole Recipe

Ingredients

  • 2 pounds of hamburger
  • 1 small finely chopped onion
  • 3 to 4 cloves of minced garlic
  • 1 cup of seasoned bread crumbs
  • 1 tablespoon of Worcestershire sauce
  • 1 large egg lightly beaten
  • 1/2 cup of cottage cheese
  • 1/2 cup of BBQ sauce
  • 2 pounds of potatoes peeled and diced
  • 1 stick of butter
  • 1/2 cup of sour cream
  • 1/2 cup of half-and-half
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 slices of thick bacon cooked and crumbled
  • 2 cups of shredded cheddar cheese

Instructions

  1. Preheat the oven to a temperature of 375°F. Prepare a 9×13 inch baking pan by spraying it with a nonstick cooking spray.
  2. In a large bowl, combine the ground beef, onion, garlic, seasoned bread crumbs, Worcestershire sauce, lightly beaten egg, cottage cheese, and BBQ sauce.
  3. Transfer the meat mixture into the prepared baking pan, ensuring it is evenly spread. Bake in the preheated oven for a duration of 30 minutes.
  4. At the same time, place the diced potatoes in a pan filled with water and cook over medium heat until they are tender.
  5. Once the potatoes are cooked, drain the water and incorporate the unsalted butter. Using a hand mixer you can get a smooth consistency. Add the sour cream, half-and-half, salt, and black pepper. Mix until all ingredients are well-combined.
  6. After the meatloaf has baked for 30 minutes, remove it from the oven and carefully drain any excess grease.
  7. Add an even layer of the mashed potatoes over the meatloaf. Next, add a generous sprinkling of shredded cheddar cheese and crumbled bacon.
  8. Place the casserole back into the oven and bake for an additional 15 minutes. Make sure the potatoes are thoroughly heated and the cheese has completely melted.
  9. Once completed, remove the casserole from the oven and let it cool a little before serving.

💭 Final Thoughts

This Loaded Meatloaf Casserole is the kind of recipe that makes everyone at the table happy. It’s hearty, cheesy, and packed with flavor — the perfect blend of comfort and convenience. Whether you’re feeding a crowd, stocking the freezer, or just want a no-fuss dinner, this one’s a keeper.

Some recipes are just meals, and some are moments. This casserole is a moment. It’s the kind of dish that makes people linger at the table a little longer, going back for “just one more bite” while the conversation flows. It’s the kind of recipe that doesn’t just fill bellies — it fills hearts.

There’s a reason comfort food has such a hold on us. It’s not just about the flavors (though, hello, bacon and cheese). It’s about the way it makes us feel — safe, cared for, and connected. This Loaded Meatloaf Casserole is all of that in one pan. It’s the Tuesday night dinner that turns into a family favorite. It’s the potluck dish that gets you asked for the recipe before people even finish their first serving. It’s the “I had a rough day” meal that makes everything a little better.

And here’s the best part — it’s flexible. You can make it exactly as written, or you can riff on it with whatever you have in your fridge. You can prep it ahead for busy nights, or make it fresh when you have the time. You can serve it to kids, grandparents, neighbors, or friends, and it will always be met with smiles.

So here’s my challenge to you: make it, make it your own, and then share it. Post it with #MeatloafGlowUp so we can all swap ideas and drool over each other’s creations. Because food is better when it’s shared — and this casserole is too good to keep to yourself.

Here’s to full plates, happy hearts, and recipes that remind us why we love gathering around the table. 🥔🧀❤️

  1. This recipe is a keeper! The only thing that I changed was the onion. My son won’t eat it so I substituted dried minced onion. My picky son had 3 servings. The rest of us had two. It was so delicious! Great recipe for gatherings.
