Hey hey, burger lovers! 💕 If you’ve ever had a burger so good it made you forget your bad mood, then you’re going to fall head-over-brioche for this one. Today we’re recreating the Grumpy Claire Burger—a sweet, savory, cheesy, bacon-y masterpiece that’s basically a hug in sandwich form.

This isn’t your average backyard burger. Oh no. This baby is stacked with crispy bacon, melty Dubliner cheese, a juicy patty, and a caramelized apple-onion topping that’s so good, it might just make you cry tears of joy. And the honey mustard? It ties everything together like a rom-com ending. 😍

Whether you’re feeding a crowd or just treating yourself to a gourmet burger night, this recipe brings restaurant-level flavor to your own cozy kitchen.

I’ve never been much of a hamburger girl, usually I would always get chicken sandwiches instead. However, my last pregnancy was a little different, that’s all I wanted was a good hamburger. We went to Backdoor Brgr on a date one night and I couldn’t get enough of the Grumpy Claire. So much so that I wanted it all the time and I had to make my own version. This is my version of the grumpy Claire!

Let’s get cookin’!

Ingredients

  • Brioche Bun
  • 1/4 pound hamburger patty
  • salt and pepper to taste
  • slice of dubliner cheese
  • honey mustard
  • 2 slices of thick cut bacon
  • 1/2 cup green apple diced
  • 1/2 cup yellow onion diced
  • 4 tablespoons salted butter
  • 1/2 cup brown sugar

Directions:

  1. Preheat the Griddle Heat your griddle to 400°F. You want it hot and ready for burger magic.
  2. Season & Cook the Patty Season both sides of your hamburger patty with salt and pepper. Place it on the griddle and cook until it’s almost medium. Then top with Dubliner cheese and let it melt into glorious gooeyness.
  3. Crisp the Bacon While the burger cooks, add your thick-cut bacon to the griddle. Cook until crispy and irresistible.
  4. Make the Apple-Onion Topping In a small pot over medium heat, melt the butter. Add diced apple and onion. Cook until soft and translucent, about 5–7 minutes.
  5. Sweeten It Up Stir in the brown sugar and a pinch of salt. Let it bubble and thicken slightly into a sweet-savory jam-like topping.
  6. Assemble the Burger Toast your brioche bun if you’re feeling fancy. Spread honey mustard on both sides. Stack the cheesy patty, crispy bacon, and a generous spoonful of apple-onion topping. Close the bun and prepare for burger bliss.

👩‍🍳 Cooking Tips for Burger Brilliance

  • Griddle Goals If you don’t have a griddle, a cast iron skillet works beautifully. Just make sure it’s hot enough to sear the patty.
  • Cheese Matters Dubliner cheese adds a unique flavor, but if you can’t find it, aged cheddar or Gruyère are great substitutes.
  • Apple-Onion Topping Don’t rush this step! Let the apples and onions get soft and caramelized—it’s the secret sauce of this burger.
  • Bun Upgrade Toasting the brioche bun adds texture and keeps it from getting soggy. Just a minute on the griddle does the trick.

🧁 Recipe Variations to Keep It Fresh

  • Spicy Claire Add a few jalapeño slices or a drizzle of sriracha to turn up the heat.
  • Claire Goes Veggie Swap the beef patty for a grilled portobello mushroom or a plant-based burger.
  • Breakfast Burger Add a fried egg and swap the honey mustard for maple aioli. Boom—brunch is served.
  • Claire’s BBQ Mood Replace honey mustard with smoky BBQ sauce and add crispy fried onions.

👶 Kid Tip: Make It Mini!

Turn this recipe into slider-sized burgers for little hands. Let the kids help assemble their own—choose their cheese, add extra bacon (because duh), and maybe skip the apple-onion topping if they’re picky. Or better yet, let them taste it and be surprised by how much they love it!

🛒 Grocery Hacks: Save Time & Stretch That Budget

  • Bulk Bacon Buy thick-cut bacon in bulk and freeze in portions. It’s cheaper and always ready for burger night.
  • Dubliner Deals Check the specialty cheese section for sales or grab a block and shred it yourself—it melts better and saves money.
  • Honey Mustard Shortcut Mix equal parts honey and Dijon mustard for a quick homemade version.
  • Apple Swap No green apples? Use any firm apple like Fuji or Gala. Just avoid overly sweet varieties.

Final Thoughts: Why This Burger Is a Whole Mood

The Grumpy Claire Burger isn’t just a meal—it’s an experience. It’s the kind of burger that makes you pause mid-bite and say, “Okay, WOW.” The sweet-savory apple-onion topping, the crispy bacon, the melty cheese, and that buttery brioche bun all come together in perfect harmony.

It’s gourmet without being fussy. Comforting without being boring. And totally doable on a weeknight.
