French Onion Sloppy Joe Sliders
🥪🧅 French Onion Beef Sliders — The Gooey, Cheesy, Crowd-Pleaser You’ll Make Again and Again

Some recipes are quiet. These? They crash the party wearing a crown of melty cheese and crispy fried onions.
The second you lift the foil and that toasty, buttery, oniony aroma escapes, everyone in the kitchen will mysteriously find something to “help with” in your immediate area. These sliders are sweet, savory, cheesy, and just a little bit sassy — thanks to French onion soup magic.
They’re bite-sized, but don’t be fooled. These little guys pack big dinner energy. Perfect for game day, backyard gatherings, or that Tuesday night when you just want something warm and indulgent without dirtying every pan in your kitchen.
When it comes to sloppy joes, I usually don’t mess with our stand by sloppy joe recipe. I mean, my kids have requested it for birthday dinners, baptisms and other special occasions. When I started down this road with this recipe, I could tell that it would become a favorite. So different and the two don’t compare, other than they are both packed with flavor!
I have been loving the slider sandwiches, the past few months because they are so so easy but make such a delicious dinner. They also would be so perfect as a party food, game day dish or even an after noon snack!

Why You’ll Love This Recipe
Imagine the love child of a French onion soup and a cheeseburger. Now imagine it living inside soft, slightly sweet Hawaiian rolls with gooey mozzarella and Swiss cheese, all held together with buttery tops sprinkled in sesame seeds and crispy fried onions.
They’re:
- Ridiculously easy — minimal prep, big payoff.
- Crowd-friendly — bake a dozen at once.
- Flexible — perfect as an appetizer, game-day centerpiece, or dinner with a side salad.
- Guaranteed to disappear — don’t expect leftovers (but if you do, they reheat beautifully).
These are the sliders that make people say, “Can I get this recipe?” before they’ve even finished the first one.
How to Assemble the Sliders
To make the sliders, start by preheating the oven to 350 degrees. Carefully slice open the sliders using a large sharp knife.
Spray a baking pan or baking dish with cooking spray and put the bottoms of the Hawaiian Rolls on the pan.
Next, add a layer of Swiss cheese. You can use any cheese you would like for this recipe, but I like the flavor of Swiss cheese with this recipe.
Now you are going to add a layer of the Sloppy Joe mixture. I used just about all of the meat mixture on the sliders. Top the Sloppy Joe mixture with crispy onion straws and a layer of shredded Mozzarella cheese. Let the cheese speak to your heart, on how much you should add!
Next, add the tops of the slider rolls back on the sandwiches. The last step to making the sliders is making the butter mixture and spreading it over the tops. Melt butter and stir in some garlic powder and onion powder. Use a basting brush to brush the butter over the tops of the Hawaiian rolls. I like to sprinkle sesame seeds on top of the butter mixture before putting them in the oven.

French Onion Sloppy Joe Sliders
Ingredients
- 1 pound ground beef
- 10.5 ounces condensed French onion soup
- 3 Tablespoons flour
- salt and pepper, to taste
- 1 package Hawaiian Sweet Rolls, 12 count
- 1 cup shredded Mozzarella cheese
- 1 cup shredded Swiss cheese
- 1/4 cup butter
- 1 teaspoon onion salt
- 1 teaspoon garlic salt
- French’s crispy fried onions
- sesame seeds
Instructions
Brown the ground beef in a skillet over medium high heat and then drain excess grease.
Once the beef is browned, add flour and make sure the meat is covered. Cook for a few minutes to get rid of the flour taste.
Add the French onion soup to the meat. Heat until thick and season with salt and pepper. Set aside.
Preheat the oven to 350 degrees and slice the Hawaiian rolls in half with a large sharp knife. Spray baking dish with cooking spray.
Place the bottoms of the rolls on a sheet pan or baking dish.
Add a layer of Swiss cheese, the sloppy joe mixture, shredded Mozzarella cheese, and finish by topping it with the crispy fried onions.
Place the tops of the Hawaiian Rolls on top of the onions.
Stir in the garlic powder and onion powder with the melted butter.
Use a brush to brush on the butter mixture on top of the Hawaiian rolls.
Sprinkle some sesame seeds on top.
Bake at 350 degrees for 20-25 minutes.
Slice sliders and serve!

💡 Lighter version tip: Use lean ground turkey, reduced-fat cheeses, and skip the butter drizzle (though it’s arguably the best part).

🎨 Fun Recipe Variations (continued)
- BBQ Beef Sliders — Swap French onion soup for BBQ sauce, use sharp cheddar, and top with pickle slices after baking.
- Mushroom & Swiss Sliders — Sauté sliced mushrooms with the beef before adding soup for a steakhouse twist.
- Turkey & Provolone — Use ground turkey with a dash of Worcestershire and thyme; swap in provolone cheese for a lighter feel.
- Spicy Kick — Mix a spoonful of horseradish or chipotle mayo into the beef mixture and top with pepper jack.
👶 Kid Tips — Making It Family Friendly
- Mini Portions for Tiny Hands — Cut each slider into smaller halves for easy grabbing.
- Milder Flavor Option — Use only mozzarella for a less tangy cheese profile.
- Fun Assembly Station — Let kids sprinkle on the cheese or place the top buns before baking — they’ll take pride in their dinner.
- Crispy Onion Swap — If little ones aren’t into fried onions, try a layer of crushed baked chips for a fun crunch.
🛒 Grocery Hacks — Making This Even Easier
- Pre-Shredded Cheese — Cuts down prep time, but go for a blend without anti-caking agents for better melting.
- Lean Meat Swap — If you use 90/10 beef, you won’t have to drain much fat.
- Roll Flexibility — No Hawaiian rolls? Dinner rolls or even mini ciabatta work in a pinch — just adjust baking time.
- Soup Shortcut — Keep canned French onion soup stocked; it’s a pantry MVP for gravies and quick stews, too.
- Frozen Option — Fully assemble (minus fried onions), wrap tightly, and freeze for up to a month. Thaw overnight before baking.
