These Easy Sugar Cookie Bars are the ultimate shortcut to sugar cookie bliss — no rolling, no cutting, no chilling. Just mix, bake, frost, and slice. They’re soft, buttery, and topped with a dreamy cream cheese frosting that’s perfectly sweet with just a hint of tang.

Perfect for:

  • Potlucks and parties (they travel like a dream)
  • Holiday trays (color the frosting to match the season)
  • Bake sales (they sell out fast!)
  • Random Tuesday nights when you just need a cookie fix

We love cookies around our house. My husband, a few years ago, was on a mission to make the perfect sugar cookie, and he did! The problem was, our daughter was asking him to make sugar cookies every week.

We love our daughter, but the traditional sugar cookie takes a few steps, and some time to make them. Until now! We have decided that this is a better cookie than the go to sugar cookie recipe! What even makes it better is that it takes less time to prepare and less mess!

Easy Sugar Cookie Bars Recipe

Ingredients

  • For the Bars
  • 2 sticks of butter (2 sticks), at room temperature
  • 2¾ cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 (8-ounce) package whipped cream cheese
  • 1½ cups granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla
  • For the Frosting
  • 1 stick of butter, at room temperature
  • 1 8 ounce, whipped cream cheese
  • 3 cups powdered sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • A drop or two of gel food coloring (optional)

Instructions

  1. Preheat oven to 350 degrees F.  Lightly butter a 9-by-13-inch baking pan. Line the pan with parchment paper.

Bars: In a medium bowl, whisk together the flour and salt. In a large bowl with an electric mixer, or in the bowl of a stand mixer fitted with the paddle attachment, beat butter and cream cheese on medium speed until well blended, about 1 minute. Add the granulated sugar and beat until smooth, about 1 minute. Add the egg and vanilla and beat on low speed until well combined, about 1 minute. Turn off the mixer and scrape down the bowl with a rubber spatula. Gradually add the flour mixture, mixing on low speed just until blended, about 1 minute.

Using a spatula, scrape the dough into the prepared baking pan and spread it into an even layer. Bake just until the edges are starting to turn light golden brown, and a toothpick inserted in the middle has moist crumbs, 20 to 25 minutes. (Do not overbake! The bars should be quite moist, and almost slightly under baked in the middle.) Let cool completely.

Frosting,: Cream together the butter, cream cheese and powdered sugar until smooth, add a drop or two of milk). Add in the vanilla, and food coloring (if using), and mix until the frosting is light and fluffy, 1-2 minutes.

  1. Spread the frosting over the cooled bars and top with sprinkles

👩‍🍳 Cooking Tips for Perfect Sugar Cookie Bars

  • Room temp is key — Soft butter and cream cheese blend better and give you a smoother dough.
  • Don’t overbake — Pull them when the edges are just golden; they’ll finish setting as they cool.
  • Cool completely before frosting — Otherwise, your frosting will melt into a sugary puddle.
  • Use gel food coloring — It’s more vibrant and won’t water down your frosting.
  • Line your pan — Makes lifting and slicing so much easier.

🎨 Recipe Variations

  • Holiday Twist — Tint frosting red and green for Christmas, pastel for Easter, or orange for Halloween.
  • Funfetti Style — Stir rainbow sprinkles into the dough before baking.
  • Citrus Kiss — Add lemon or orange zest to the dough and frosting.
  • Chocolate Drizzle — Melt chocolate and drizzle over the frosted bars.
  • Nutty Crunch — Sprinkle chopped pecans or almonds on top.

🧒 Kid Tips

  • Let kids choose the frosting color and sprinkle toppings.
  • Cut bars into fun shapes with cookie cutters after frosting.
  • Make mini bars for smaller hands (and smaller sugar rushes).
  • Turn it into a decorating party — set out bowls of toppings and let them go wild.

🛒 Grocery Hacks

  • Stock up on butter — Buy in bulk when it’s on sale and freeze it.
  • Powdered sugar — Store in an airtight container to prevent clumping.
  • Vanilla extract — Buy larger bottles; it’s cheaper per ounce.
  • Gel food coloring — One set lasts forever and works for all your baking projects.
  • Cream cheese — Whipped cream cheese blends faster and easier than block cream cheese for this recipe.

💭 Final Thoughts

These Easy Sugar Cookie Bars are proof that you don’t need to spend hours in the kitchen to make something that feels special. They’re soft, sweet, and endlessly adaptable — the kind of dessert that works for every season, every holiday, and every “just because” moment.

Some desserts are about nostalgia. Some are about convenience. These bars? They’re about both — and then some. They’re the kind of treat that makes you feel like you’ve just stepped into a kitchen where someone’s been baking all afternoon just for you. The buttery, vanilla-kissed base is soft enough to melt in your mouth, yet sturdy enough to hold a generous layer of fluffy cream cheese frosting. And that frosting? It’s the kind of sweet, tangy cloud that makes you close your eyes for a second longer than you meant to.

What I love most about these sugar cookie bars is how they fit into real life. They’re not fussy. They don’t require a rolling pin, a dozen cookie cutters, or the patience of a saint. You can whip them up on a weeknight, frost them while you’re chatting on the phone, and have them ready to share before your favorite show is over. They’re the dessert equivalent of your favorite cozy sweater — reliable, flattering, and always makes you feel good.

They’re also a blank canvas for your creativity. Want to tint the frosting to match your kid’s birthday party theme? Go for it. Feeling festive for the holidays? Add sprinkles, edible glitter, or a drizzle of chocolate. Need something for a bake sale? Slice them into perfect little squares, wrap them in cellophane, and watch them disappear. These bars are endlessly adaptable, which means they’ll never get boring — and you’ll always have a go-to recipe in your back pocket.

And here’s the thing: baking is about more than just the end result. It’s about the process — the way the kitchen smells when the bars are in the oven, the way the frosting swirls under your spatula, the way people’s faces light up when you hand them a plate. These sugar cookie bars are a little reminder that joy can be simple, sweet, and shared.

So here’s my challenge to you: make them, love them, and make them yours. Add your twist, snap a photo, and share it with #SweetBarChallenge so we can all swap ideas, cheer each other on, and maybe even inspire the next great cookie bar trend. Because the only thing better than eating sugar cookie bars… is knowing you’re part of a community of bakers who believe that dessert should be fun, beautiful, and made with love.

Here’s to soft centers, creamy frosting, and recipes that make life a little sweeter — one bite at a time. 🍪💛
