Well now that school is in full swing, I didn’t realize how exhausted I would feel. Having three kids is no joke, now we have a first grader and he’s exhausted when he gets home after a full day of school. All my kids want to do when they get home is snuggle, I can’t say no because it’s my favorite.

Ellie is now the biggest mommy’s girl and never lets’ me put her down. That puts a damper on making dinner. I guess that means we’re getting back to the crockpot meals again. However, I’m still trying to cut as much fat out as I can in some of my favorite recipes. Give this one a try, we really liked it.

 

Ingredients

  • 96% lean ground beef, browned
  • 1/2 onion diced
  • 2 cups of potatoes, chopped
  • 1/2 salt
  • 1 teaspoon garlic salt
  • 1 can cream of mushroom soup
  • 2 cups beef broth
  • 1 1/2 cups penne pasta
  • 1 1/2 cups 2% sharp cheddar cheese, shredded 
  • 3/4 cup low-fat sour cream

 

Directions

  1. Brown the Beef
    • In a skillet over medium heat, cook ground beef until no longer pink. Drain excess fat.
  2. Load the Slow Cooker
    • Add browned beef, diced onion, cream of mushroom soup, salts, and chopped potatoes to the slow cooker. Stir to combine.
  3. First Cook
    • Set to high for 3 hours.
  4. Add Broth & Pasta
    • Stir in beef broth. Add uncooked penne pasta, making sure it’s submerged in liquid. Cover and cook an additional 30 minutes on high.
  5. Cheesy Finish
    • Stir in 1 cup cheddar cheese and sour cream until creamy. Sprinkle remaining ½ cup cheese on top. Cover and cook for 20 more minutes.
  6. Serve & Enjoy
    • Spoon into bowls and serve hot.
