🥄🧀 Creamy Swiss Chicken & Spinach Rotini Bake — The Weeknight Wonder You’ll Put on Repeat

Creamy Chicken Pasta Casserole
Some casseroles do the job. This one does the job, makes you a cup of tea, folds your laundry, and tucks you in with a forehead kiss.
Okay, maybe not literally — but the feeling is there. This Creamy Swiss Chicken & Spinach Rotini Bake is the definition of cozy meets quick: tender pasta, juicy chicken, earthy mushrooms, and melty Swiss all tangled together in a creamy sauce that bakes into golden-bubbly perfection.
It’s hearty enough for Sunday dinner, but easy enough for Wednesday night when you’ve got a PTA meeting, soccer practice pickup, and a to-do list that’s basically a novella.
My poor neighbors keep having health issues, which always makes it hard to cook dinner for their family. It really isn’t that hard to make a dish for my family and theirs at the same time. It’s a perfect time to try a new recipe and I get to share it with you!
I seriously love the rotisserie chicken! It has changed my life! Back in the day, the options you had when making a dish like this, is to cook the chicken or a can of chicken. Both are still great options, but this way it cuts down on cooking time and they are so juicy.

Why This Dish Deserves a Spot in Your Dinner Rotation
If you’ve ever wanted your kitchen to smell like you’ve been cooking for hours (without actually cooking for hours), this is your moment.
We’re talking:
- Comfort — Creamy sauce, cheesy topping, perfectly cooked pasta.
- Greens you’ll actually crave — Spinach gets all tender and tucked into the sauce like little flavor pockets.
- Shortcuts you can feel good about — Using cream of chicken soup and pre-cooked chicken keeps it simple without sacrificing homemade vibes.
- Family appeal — Mushrooms for the grown-ups, cheesy pasta for the kids, and chicken for that “yes, I had protein today” satisfaction.
Plus, it’s one of those casseroles that reheats like a dream — which means lunch tomorrow is already sorted.
TIPS AND TRICKS
PROTEIN: You can swap out the chicken with turkey. Both flavors are delicious in this dish.
PASTA: Use whatever you have in your pantry! I suggest using something that has a lot of grooves, so it can grab the sauce.
VEGGIES: I used mushrooms and spinach. I realize there a lot of families that don’t love mushrooms, so switch them out. Use the veggies that your family loves.
STORAGE: Casseroles always taste better the next day! Just store it in an airtight container and it should stay good up to 3 days.
