Oh, friends. We need to talk about the magic that happens when creamy, tangy cheesecake meets a buttery graham cracker crust and gets crowned with glossy cherry pie filling—in MINI form.

Yes, we’re making individual cherry cheesecakes, and trust me, once you make these, you’ll never show up to another gathering without them. They’re cute enough to charm a room, perfectly portioned (which only sort of helps with self-control), and they deliver that rich cheesecake decadence without any of the fuss of a springform pan and water bath.

Plus, they look like you spent hours in the kitchen—when really, you just layered, baked, and chilled. It’s the kind of dessert that makes you look like a domestic genius and also lets you eat cheesecake without committing to a huge slice. (Although, if you do want to eat three minis in a row… zero judgment here.)

These are a party in your mouth, wrapped in a cupcake liner. Let’s make some magic!

I haven’t had cheesecake in a long time and so I thought I’d make my own. I love cherries but you really could make this recipe a variety of ways with a variety of different toppings.

Any fruit would be amazing, or simply replace the graham crackers with Oreos, and then throw some in with the batter and you have Oreo cheesecakes. I love the flavor of these and how easy they are it really is a conundrum when you’re trying to eat more healthy.

    • 📝 The Recipe: Individual Cherry Cheesecakes

    Ingredients

    • 1 cup salted butter
    • 2½ packages graham crackers (about 16 full-size crackers)
    • ⅔ cup sugar
    • 4 large eggs
    • 4 packages cream cheese (8 oz each), softened
    • 2 cups granulated sugar
    • 2 teaspoons vanilla extract
    • 2 (21 oz) cans cherry pie filling

    Directions

    1. Make the Graham Cracker Crust

    • Crush your graham crackers into fine crumbs. (You can blitz them in a food processor or go old-school with a gallon bag and rolling pin—great stress relief!)
    • Melt the butter and pour it over the crumbs along with the ⅔ cup sugar. Mix with a fork until the mixture feels like damp sand. Set aside.

    2. Make the Cheesecake Filling

    • In a large mixing bowl, beat the cream cheese until smooth and creamy.
    • Add the 2 cups sugar, eggs, and vanilla extract. Beat until everything is blended and dreamy—no lumps allowed!

    3. Assemble the Minis

    • Line muffin tins with paper cupcake liners.
    • Press 1–2 tablespoons of crust into the bottom of each liner, pressing firmly so it holds together.
    • Fill each cup about ⅔ full with cheesecake batter.

    4. Bake

    • Preheat oven to 350°F.
    • Bake for 17–20 minutes, until the centers are just set. Don’t worry if they puff slightly—they’ll settle as they cool.

    5. Chill & Top

    • Let them cool completely, then cover and chill in the fridge for at least 2 hours (overnight is even better).
    • Just before serving, spoon about a tablespoon of cherry pie filling on top of each one.

    6. Enjoy Cold

    • Serve cold, and watch them vanish.

👩‍🍳 Cooking Tips for Cheesecake Success

    • Room Temp Cream Cheese: This is non-negotiable. Soft cream cheese blends smoothly, preventing lumps.
    • Don’t Overmix After Eggs: Once the eggs are in, mix just until combined. Overmixing can cause cracks.
    • Flat Crust = Better Bites: Press the crust down firmly so it doesn’t crumble apart when you remove the wrapper.
    • Cool Gradually: Cheesecakes like to chill out—literally. Let them cool in the pan before transferring to the fridge.
    • Cherry on Top: Top just before serving so the cherry filling looks fresh and glossy.

🧁 Recipe Variations to Keep it Fun

    • Berry Medley: Swap cherry topping for blueberry, raspberry, or a mix.
    • Chocolate Swirl: Add ½ cup melted chocolate chips to half the batter and swirl for a chocolate ripple effect.
    • Citrus Pop: Stir in a teaspoon of lemon zest to the batter for a tangy twist.
    • Nutty Crunch: Sprinkle chopped pecans or walnuts over the crust before adding the filling.
    • Caramel Apple: Top with apple pie filling and drizzle with caramel sauce.

    👶 Kid Tip

These are prime for letting kids help in the kitchen.

    • They can crush graham crackers (rolling pin method is fun!).
    • Let them spoon crust into liners and press it down with the back of a spoon.
    • Older kids can help dollop cherry topping—it’s like art with dessert.

And because these are individual servings, it’s less messy than slicing a big cheesecake.

    🛒 Grocery Hacks

    • Buy Cream Cheese in Bulk: Watch for sales, especially around holidays, and freeze unopened packs.
    • Graham Crackers: Store-brand works great for crusts—no need to splurge.
    • Pie Filling Flex: If cherry pie filling isn’t on sale, grab whatever flavor is—blueberry, strawberry, even peach.
    • Butter Stockpile: Butter freezes beautifully—buy when it’s cheap.

These little cherry cheesecakes are the dessert equivalent of wearing a twirly dress—fun, charming, and guaranteed to bring smiles. They look fancy but are secretly simple, travel well, and hit that perfect sweet-creamy-buttery-crunchy balance that makes you close your eyes on the first bite.

They’re perfect for:

  • Holiday trays
  • Birthday dessert tables
  • Potlucks
  • Bridal & baby showers
  • Or… a Wednesday night when you just feel like treating yourself.

If you’ve been searching for a dessert that gets “oohs” and “ahhs” without hours of effort, this is it. Make them once, and they’ll be on repeat forever in your kitchen. The fact that you can mix and match toppings means they’ll never get boring—and that buttery crust plus creamy filling is the kind of comfort food we all need more of.

  1. I have made these Cherry Cheesecakes for years but I use Vanilla wafers for the base instead of graham crackers. Always a yummy treat.
