This Cheesy Taco Biscuit Bake is the ultimate mash‑up of Tex‑Mex flavor and down‑home comfort. Imagine fluffy, golden biscuit topping over a saucy, cheesy taco filling loaded with seasoned beef, peppers, and just enough heat to keep things interesting. It’s hearty, it’s cheesy, and it’s the kind of dinner that makes everyone at the table happy — even the picky eaters.

It’s:

  • Ridiculously easy — Bisquick does the heavy lifting.
  • Perfect for feeding a crowd — or just your hungry crew.
  • A leftover dream — reheats like a champ for lunch the next day.

💬 Reader prompt: Are you team “extra sour cream on top” or team “pass me the hot sauce”?

Making dinner every night can become so routine!  You get your favorite standbys and it seems like that’s all you make. At least for me that’s how it feels.

My older daughter will tell you all she ate as a child was Mac and Cheese. It’s true that they ate their fair share but that is because the majority of them requested it. I also remind them that we didn’t have Pinterest then and so you ate the recipes that were handed down to you by your mothers.

It’s so fun to find something new now and know that your family is going to love it! This is one of them!

Flaky biscuit crust, layered with a taco seasoned beef and topped off with a creamy, cheesy sauce. That’s heaven in a pan!

Ingredients

  • Cooking spray
  • 2 cups (246g) all-purpose baking mix (such as Bisquick)
  • 1 1/4 cups whole milk
  • 2 tablespoons vegetable oil, divided
  • 2 pounds 85/15 ground beef
  • 1 small yellow onion, finely chopped (about 1/2 cup)
  • 1 medium poblano chile or 1/2 small bell pepper, seeded and chopped (about 3/4 cup)
  • 1 (1-ounce) envelope taco seasoning mix, or 3 tablespoons homemade
  • 3/4 teaspoon kosher salt
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 cups (8 ounces) shredded pepper jack cheese, divided
  • 2 cups (8 ounces) shredded sharp cheddar cheese, divided
  • 2 (10-ounce) cans diced tomatoes and green chiles, drained (such as Rotel)

Instructions

  1. Directions

    1. Preheat & Prep
    2. Preheat oven to 375°F. Spray a 9×13‑inch baking dish with cooking spray.
    3. Mix the Biscuit Batter
    4. In a medium bowl, stir together baking mix, milk, and 1 tablespoon vegetable oil until just combined. Set aside.
    5. Cook the Beef & Veggies
    6. Heat remaining 1 tablespoon oil in a large skillet over medium‑high heat. Add ground beef, onion, and poblano (or bell pepper). Cook, breaking up beef, until browned and veggies are softened, about 6–8 minutes. Drain excess fat if needed.
    7. Season It Up
    8. Stir in taco seasoning, salt, and drained tomatoes with green chiles. Simmer 2–3 minutes to let flavors mingle.
    9. Make It Creamy & Cheesy
    10. In a small bowl, mix mayonnaise, sour cream, 1 cup pepper jack, and 1 cup cheddar. Stir this mixture into the beef until melty and combined.
    11. Assemble the Bake
    12. Spread beef mixture evenly in the prepared baking dish. Drop spoonfuls of biscuit batter over the top, spreading gently to cover most of the filling. Sprinkle with remaining cheeses.
    13. Bake & Serve

👩‍🍳 Cooking Tips for Biscuit‑Topped Bliss

  • Don’t overmix the biscuit batter — a few lumps are fine and keep it tender.
  • Drain your beef well — too much grease can make the bottom soggy.
  • Poblano = mild smoky heat — bell pepper = sweet and kid‑friendly.
  • Cheese tip — shred your own for the best melt.
  • Rest before serving — gives the filling time to set up for cleaner slices.

💬 Reader prompt: Do you like your biscuit topping fully covering the filling or leaving little “cheese windows” for the sauce to peek through?

🎨 Recipe Variations

  • Chicken Fiesta — swap beef for shredded rotisserie chicken.
  • Veggie Lover’s — add black beans, corn, and zucchini to the filling.
  • Spicy Southwest — use hot Rotel and pepper jack only.
  • Breakfast Twist — swap beef for cooked sausage and add scrambled eggs.
  • BBQ Beef Bake — replace taco seasoning with BBQ rub and Rotel with BBQ sauce.

🧒 Kid Tips

  • Use mild taco seasoning for little taste buds.
  • Let kids sprinkle the cheese — they’ll feel like mini chefs.
  • Serve with a side of fruit for balance.
  • Cut into “biscuit bites” for easy finger food.

💬 Reader prompt: Parents — do your kids pick out the biscuit topping first or dive straight into the cheesy meat layer?

🛒 Grocery Hacks

  • Bisquick — buy in bulk; it’s a pantry MVP for pancakes, biscuits, and casseroles.
  • Rotisserie chicken — if swapping proteins, it’s a huge time‑saver.
  • Cheese — blocks are cheaper and melt better than pre‑shredded.
  • Rotel — stock up during sales; it’s magic in dips, soups, and casseroles.
  • Poblano peppers — freeze chopped extras for future recipes.

💭 Final Thoughts

This casserole is proof that weeknight dinners can be fun, flavorful, and totally doable. It’s cheesy, hearty, and just a little bit indulgent — the kind of meal that makes people linger at the table for “just one more bite.” Plus, it’s endlessly adaptable, so you can make it your own every time.

💬 Reader prompt: If you could mash up any two comfort foods into one casserole, what would you choose?

Some dinners are just dinners. This Cheesy Taco Biscuit Bake? It’s a weeknight win, a potluck hero, and a “wow, you made this?” kind of dish. It’s the smell of taco‑spiced beef filling the kitchen, the sight of golden biscuits peeking through melted cheese, and the joy of that first bite when all the flavors come together.

I love that it’s flexible — you can keep it classic, spice it up, or sneak in veggies. It’s forgiving, too; even if your biscuit layer isn’t perfectly even, it will still taste like something you’d proudly serve to guests. And it’s the kind of recipe that makes people smile, whether you’re serving it to your family, your friends, or just yourself on a cozy night in.
